Steps:

  • Heat a Dutch oven over medium-high heat. Add olive oil. Saute carrots, onion, potato, and bell pepper until soft, about 5 minutes. Add olives, garlic, and ginger paste and saute for 2 minutes.
  • Stir in tomatoes, cilantro, parsley, cumin, seasoned salt, sazon, paprika, turmeric, lemon juice, cayenne, black pepper, and bay leaf. Cover and cook until tomatoes have broken down and flavors have combined, about 20 minutes. Add shrimp, cover, and cook until they are bright pink, about 5 minutes.

Steps:

  • Heat an outdoor grill, stovetop grill pan or broiler. Have ready four 4-6 inch skewers.
  • Mix sauce ingredients in a bowl, cover and refrigerate until serving.
  • Thread 6 shrimp close together on each skewer.
  • Melt butter with garlic. Brush 1/2 the mixture on each bread slice.
  • Brush 1 side of shrimp with 1/2 the remaining garlic butter, then sprinkle with 1/2 the Spice Rub.
  • Grill or broil shrimp 3 minutes; turn and brush with remaining garlic butter; sprinkle with remaining spice rub.
  • Grill shrimp and bread 3 minutes, or until shrimp are cooked and the bread is toasted.
  • Slide the shrimp from each skewer onto a slice of garlic toast.

Moroccan-Inspired Shrimp on the Barbie image

Steps:

  • Soak four bamboo skewers for 30 minutes in water. This prevents the skewers from burning when placed on the grill.
  • In a rectangular dish (or appropriately sized container to lay bamboo skewers flat in one layer), combine first 10 ingredients.
  • Place shrimp on 9-inch bamboo skewers (about 6 per skewer) by piercing each shrimp through head first and then through tail. Lay skewers in the dish containing the marinade, turning to coat both sides.
  • Marinate for 30 minutes at room temperature, turning skewers over mid-way. You may also marinate refrigerated for 1 - 2 hours.
  • Preheat grill to medium-high heat.
  • When grill is searing hot, grill skewers for 3 - 4 minutes on each side or until desired doneness.
  • Serve shrimp attached to skewers or removed per your preference.
