Mothers Day Cornbread Taco Casserole Recipes

Steps:

• In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the corn, tomato sauce, water, green pepper and taco seasoning. Spoon into a greased 2-qt. baking dish., Prepare cornbread mix according to package directions for cornbread. Stir in half of the onions. Spread over beef mixture. Bake, uncovered, at 400° for 20 minutes. , Sprinkle with cheese and remaining onions. Bake until cheese is melted and a toothpick inserted into cornbread layer comes out clean, 3-5 minutes longer.

Steps:

• 1. Grease a 9x9" square oven safe casserole dish. Prepare your meat mixture first. Fry up the meat in the coconut oil until the pink is just gone, then add the Worcestershire sauce and taco seasoning. Add the tomato and saffron and corn. Saute for about 5 more minutes on med. low. Cool down.
• 2. Once the meat has completely cooled, make the cornbread mix according to the package directions. I used non-sweetened almond milk as opposed to dairy in the cornbread.
• 3. Pour 1/2 the cornbread batter into the greased casserole dish. Top with the turkey mixture, add the grated cheese, then pour the remaining cornbread batter on top of the cheese, smooth it gently.
• 4. Bake at 350'F for 30 minutes until golden on the top. Cool on a wire wrack and cut into squares. Serve with a nice green salad or other vegetables on the side.

• After cooking and draining the ground beef, add the onions, tomato sauce, corn, water, and taco seasoning.
• Spoon into a greased 2 1/2 quart baking dish.
• Prepare the corn bread according to the package directions. Pour over the beef mixture.
• Bake uncovered at 400 degrees for 20 minutes or until the cornbread is done.
• Top with cheese and bake 5 more minutes to melt the cheese.
• Enjoy!

• Cook and stir ground beef in a skillet over medium heat until brown and crumbled, 7 to 10 minutes; drain grease. Add taco seasoning; mix well. Stir in salsa and black beans; remove from heat.
• Grease a 9-inch pie pan or casserole dish.
• Mix corn bread mix, milk, egg, honey, and corn oil together in a bowl until batter is smooth; stir in corn. Pour batter into pie pan. Layer ground beef mixture over batter; sprinkle with Cheddar cheese. Top with corn chips.
• Place in a cold oven; set temperature to 350 degrees F (175 degrees C). Bake until sides are golden brown, 30 to 35 minutes.

Steps:

• Brown ground beef and drain. Return to skillet, add onions & peppers and cook until vegetables are soft.
• Add corn, tomato sauce, corn and taco seasoning. Mix well and cook, over med about 15 minutes to reduce liquid.
• Spoon into baking dish and top with cheese.
• Mix cornmeal, flour baking powder and salt together in mixing bowl. Add egg and milk and then add butter and blend. Pour over meat mixture.
• Bake for 25 minutes at 375°F.
