MRS. GERALDINE'S GROUND BEEF CASSEROLE
This recipe came from a local church fund raising cook book. Mrs. Geraldine is a good friend of the family. She reminds me so much of Mrs. Clause, that I can't help but smile every time I think of her. This recipe freezes well. Do not bake before freezing. Just put it together, freeze it, thaw it and cook.

Steps:
- Brown meat in large skillet or Dutch oven.
- Add onions, pepper and celery and simmer for 15 minutes.
- Add tomatoes and tomato sauce, mushrooms, brown sugar and Worcestershire sauce.
- Add salt and pepper to taste.
- Cook in skillet for 1 hour.
- Place cooked pasta in bottom of large casserole dish.
- Spoon mushroom soup over pasta.
- Pour sauce over the soup and top with cheese.
- Bake in 350°F oven for 30-45 minutes.
- Can sizes do not have to be exact, just as long as they are within a close range, everything will work out.

- 1. In a Dutch oven, cook beef, green pepper and onion until meat is no longer pink and vegetables are tender; drain. Remove from heat; stir in remaining ingredients. Transfer to two greased 2-1/2-qt. baking dishes. Cover and bake at 350 degrees F for 45-50 minutes or until bubbly.

Steps:
- Brown ground beef with chopped onions, chopped garlic, salt and pepper.
- Cook over medium heat for about 10 minutes or until meat is well cooked.
- Add jarred salsa and cumin. Cover and simmer in low heat for another 10 minutes until flavors blend.
- Add the zucchini chunks. Cover and cook for about 10 more minutes until zucchini is cooked, but not too soft.
- NOTE: this is a versatile casserole with 6 basic ingredients for a budget or low calorie dish, but every person can add some other ingredients to their own taste like: ground turkey, ground or shredded chicken instead of the ground beef, corn or cheese. Steps:
- Preheat oven to 350 degrees.
- In a 2-quart casserole, layer rice, then corn. Sprinkle with salt and pepper.
- Pour 1 can tomato sauce mixed with 1/2 cup water over first two layers.
- Next, layer chopped onion, green pepper, then ground beef, seasoned with salt and pepper.
- Pour second can of tomato sauce mixed with 1/2 cup water over all.
- Cover meat with 4 strips bacon, cut in half.
- Cover dish and bake at 350 degrees for 1 hour. Uncover and bake about 30 minutes longer.

GROUND BEEF (HAMBURGER) CASSEROLE WITH VEGETABLES
I made this one winter day when I couldn't decide what to do with 2 lbs of ground beef that I had. I put it into a large Le Creuset dutch oven and it took 2 1/2 hours for the potatoes and carrots to cook through.. The family liked it.

- Brown meat in olive oil with onion.
- Add garlic, Italian seasoning, chili powder and parsley and stir for 2 minutes. Add can of tomatoes, with juice, and stir. Remove from heat.
- In a very large, heavy, dutch oven, pour in consomme. Place one layer of potatoes and then carrots. Salt & pepper them lightly.
- Add a layer of prepared meat.
- Top meat with lima bean layer and then more potatoes and carrots. Season again, lightly.
- Continue layering until everything is used up, but reserve 1 1/2 c of meat, which will be the top layer of the casserole.
- Bake at 350°F for 2 1/2 hours or until carrots and potatoes are cooked through.

- Drain excess fat if necessary.
- Add tomatoes, salt, soup.
- Allow to simmer while cooking noodles according to package directions.
