Steps:
- Combine wild rice, brown rice, and beef broth in a 3-quart sauce pan. Bring to a boil and reduce heat to Low. Cover and simmer 50-55 minutes until rice is tender.
- Meanwhile, slice mushrooms. Chop shallot. Chop (or crush) garlic.
- Melt butter in a large skillet over Medium heat. Saute shallots 3 minutes. Stir in garlic; add mushrooms, salt and pepper. Saute 4 minutes or until mushrooms are dark and tender.
- When rice is finished cooking, toss mushroom mixture with rice and serve while hot.
- Special note: The recipe originally says to drain the rice. I've never had any extra liquid to drain, but I use a different rice as well. To make the recipe easier for me I bought a rice mixture at my store called "Royal Blend". I highly recommend it since it contains Texmati white, brown, wild, and red rice. This might be the reason no draining is necessary. If you are able to find this rice and buy it, use 1 1/2 cups of it instead of the 3/4 cup of both rice.
MUSHROOM PILAF
While combing through my grandmother's recipes, I ran across something I hadn't seen since childhood. Wishing to revive my memories of Sunday dinners past, I prepared what Grandma called her "pretty pilaf." I should have doubled the recipe! Not only was it a hit, it was just as I remembered it back in Waukegan, Illinois, where I grew up.

QUINOA PILAF WITH CRIMINI MUSHROOMS
This dish has been a big hit as a side dish at Calhoun. The kids at Calhoun were fascinated to learn that quinoa is not a grain but a seed. It looks like a grain and reacts like a grain when cooked but it is still a seed. You can see the stamen in cooked "grain". It's nutty and delicious as a replacement for rice.

Steps:
- Place a saucepan on high heat and get it hot. Add the olive oil and swirl it around to make sure the entire surface is covered with oil. Add the shallot and sweat (cook until translucent but not brown). Add the crimini mushrooms and cook until brown. Add the quinoa, thyme leaves, bay leaf, kosher salt and black pepper to the pan and stir. Let the ingredients heat up and roast a little to bring out all their fullest flavors. The steam coming up should be very aromatic.
- Slowly and carefully add the vegetable stock (it will spatter because the pan and ingredients are hot). When it comes to full boil, reduce the heat to a low simmer, cover and allow to steam for about 15 minutes.
- After 15 minutes, turn off the heat, remove lid and fluff the quinoa and then replace the lid and allow to sit for about 10 minutes.
- Taste for seasoning and adjust, if necessary. Serve.

- Set a heavy-bottomed saucepan (preferably with a tight-fitting, glass lid) over medium heat and add the porcini oil (or truffle/olive oil). Add the shallots and fresh mushrooms; sauté until the vegetables have softened and the mushrooms have given up their liquid.
- Add the barley, rehydrated mushrooms, salt, pepper, and dried herbs. Sauté until the barley begins to smell toasty/nutty, 1–2 minutes (the barley will absorb the oil, which is fine). Bring the heat to high while stirring. Add the wine; stir and scrape the bottom of the saucepan with a wooden spoon until the wine has been almost completely absorbed/reduced. Stir in the vegetable broth and bring just to a boil. Cover and reduce heat to low (maintain a gentle simmer).
- Simmer, undisturbed, until liquid is absorbed and the barley is tender but "toothy" (al dente), 50–60 minutes. NOTE on soaked barley: if you opted to soak your barley overnight, start checking the texture at 40 minutes. When the barley is cooked to your liking, remove the lid and continue to simmer for ~5 minutes or until any remaining liquid is absorbed/evaporated. Fluff with a rice paddle or fork, sprinkle with cheese (if using), and serve.
