MY BISQUICK " IRISH SODA BREAD "
The original recipe came from Cooks.com but I changed it a little to make it more "diet friendly". Sometimes I leave out the "optional" caraway seeds since I don't really care for them that much. I like to use 1/4 cup orange flavored dried cranberries (craisins) and 1/4 cup golden raisins. Be sure to plump whichever you use in the 3/4 cup of water in the microwave just short of boiling before adding.

Steps:
- Add shortening and powdered milk to biscuit mix and cut in with 2 knives until mix is like coarse meal.
- Plump raisins or craisins in 3/4 cup water in microwave for a few seconds just short of boiling.
- Add sugar, and caraways seeds and plumped raisins or craisins along with the water to the flour mixture and stir until well blended.
- Spread with your hands in the bottom in a flour sprayed 9 inch pie plate.
- Bake in 375 degree oven for 30 minutes.

- Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
- Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
- With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
- Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
- Cool on a baking rack. Serve warm or at room temperature.

My mom bugged grandpa for this recipe but he told her he didn't have one. So, when he made the bread one day she captured each ingredient in a bowl and measured it and put it in the bowl he planned to mix it in!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a cast iron skillet.
- In a medium bowl, mix together the flour, baking soda and sugar. Toss the raisins with the flour mixture until coated. Make a well in the center and add the egg, buttermilk, and melted margarine. Stir until all of the dry ingredients are absorbed. Turn the dough out onto a floured surface and knead for a few quick turns just to even out the dough. Handle the dough as little as possible. Pat into a flat circle, and place into the prepared pan.
- Bake the bread for 40 to 45 minutes in the preheated oven, or until the edges are golden.

TRADITIONAL IRISH SODA BREAD
This makes a fairly dense, rustic (ugly, even) loaf of bread that is tasty and not sweet. It is crusty and rough on the outside, chewy inside. Nummy hot with lots of butter! Note: sometimes (depending on humidity etc) it takes a bit more than the 1 1/2 cups of buttermilk--just keep adding a little bit at a time until it all holds together as stated in the recipe.

- Heat oven to 425 degrees F. Brush a baking sheet with melted butter or spray with non-stick spray.
- Combine dry ingredients in a deep bowl. Gradually stir in 1 cup buttermilk, beating constantly, until dough is firm enough to be gathered into a ball. If dough crumbles, add up to 1/2 cup more buttermilk, 1 tbsp at a time, until it holds together.
- Place on a lightly floured board and pat into an 8-inch flattened round loaf.

I found this delicious simple recipe about a year ago....it's very addicting and excellent with Corned Beef and Cabbage. Cut the bread into wedges and serve warm with butter.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
- In a large bowl, mix together the flour, sugar, caraway seeds, baking powder, salt, and baking soda until the mixture is well combined. In another bowl, whisk the eggs with the sour cream. I got this recipe from my friend Sue - it is the best Irish Soda Bread I have tasted and this is now my go to recipe! Great as an accompaniment to soups or stews. Very easy to make - serve warm with lots of butter!

- Preheat oven to 350ºF.
- Line a cookie sheet with parchment paper, or lightly grease.
- Combine flour, salt and baking soda in a bowl.
- With a pastry blender, cut in butter until mixture resembles coarse crumbs.
- In a small bowl or 2 cup measure, mix buttermilk, honey & whiskey.
- Add all at once to dry mixture and stir just until no dry spots remain.
- Turn onto lightly floured surface and knead for 1 minute (too much will toughen and too little will inhibit rising).
- Divide dough in half and shape into round loaves.
- Place on cookie sheet. With a floured knife cut a cross 1/2 inch deep in each loaf.
- In small cup, combine whiskey and milk.
- Brush loaves with glaze.
- Bake for 35-40 minutes or until loaves sound hollow when tapped on bottoms. Remove from pans and let cool on wire racks.
- Cut into wedges or slices and serve warm.

- Mix together flour, soda, salt, and sugar.
- Add sour milk and stir together with a wooden spoon. The dough should be thick and sticky, but not too wet.
- Turn dough onto a floured surface and form with hands into a round loaf. Place the loaf into a cast-iron frying pan or heavy round casserole dish that has been greased with butter. Score the top in the form of a cross with a wet knife (dig in at least an inch).
- Bake at 350 degrees for 40 minutes. Bread should cool for an hour before serving (but I like to eat it while it's still warm!).
- Note: If the loaf is made with whole-meal wheat flour, it is known as brown bread; if made with unbleached white flour, it's Irish soda bread. Authentic Irish soda bread is made with sour milk, not buttermilk, or milk soured by adding vinegar or lemon juice. To sour milk, simply leave it out overnight.
