NANA DOT'S IRISH SODA BREAD
This was my mom's mothers recipe (my Nana Dot) and has been passed down for generations, direct from Ireland. If you like soda bread, this is awesome!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
- Stir together the flour, baking soda, baking powder, salt, and sugar in a large bowl until evenly blended. Cut in the butter using a pastry blender or your hands until the mixture resembles coarse cornmeal. Stir in the raisins, currants, and caraway seeds, then make a well in the center and pour in the milk and vinegar. Stir with a spoon until the dry ingredients are moistened.
- Turn the dough out onto a well floured work surface, and knead gently 8 to 10 times. Divide the dough into two balls, and place onto the prepared baking sheets.
- Bake in preheated oven for 15 minutes, then reduce heat to 375 degrees F (190 degrees C), and bake until the top of the bread is golden brown, about 15 minutes more.

NANA'S IRISH SODA BREAD WITH WHISKEY SOAKED RAISINS
Our family favorite Irish soda bread recipe! Cut into wedges and serve warm with fresh butter as a traditional side to hearty Irish fare such as Stew, Cottage or Shepherd's Pie, or Corned Beef Dinner. Also a tasty tea-time snack served with butter and a dab of marmalade or a drizzle of honey, or with a slice of smoked salmon. Enjoy!

Steps:
- Preheat the oven to 350°F.
- In a small saucepan or in the microwave, bring the whiskey and honey to a boil and add the raisins or currants. Cover and off the heat. Set aside and let steep.
- Butter a round 1 1/2 to 2 quart baking dish, set aside.
- Add the flour, sugar, baking soda, baking powder and salt together in a large bowl; use a wire whisk to combine.
- In a small bowl, beat the eggs and stir in the sour cream, mixing well to combine.
- Add the egg mixture to the flour mixture, stir well with a wooden spoon (batter will be thick).
- Stir in the whiskey-soaked raisins or currants (along with the whiskey-honey they were steeped in); blend well.
- Turn batter into the prepared baking dish.
- Dust the top with flour and pat the batter evenly in the pan with your hands.
- Use a sharp knife to make a cross on the top.
- Bake for 50 minutes in preheated 350 F oven.
- Remove to a rack and let cool for 10 minutes, then turn out onto a serving dish. Cut into wedges and serve warm with real butter.
TRADITIONAL IRISH BROWN SODA BREAD
Unlike many of the recipes here, none of the soda bread that I have ever eaten in Ireland was sweet or contained sugar, so here is a recipe for a traditional soda bread from Keith Floyd. This is great with Irish Stew but also a handy recipe to have in reserve for the times that you run out of bread and can't face going to the shops. Do feel free to substiute buttermilk for the sour milk in this recipe.

- Mix the dry ingredients very well.
- Moisten with the sour milk to form a soft dough.
- Knead lightly.
- Form into a round, mark with a cross, place on a tin and bake for 30-45 minutes in the oven at 220°C.
CLASSIC IRISH SODA BREAD

- Preheat oven to 375°. Whisk together first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk together 1 egg and buttermilk. Add to flour mixture; stir just until moistened. Stir in raisins., Turn onto a lightly floured surface; knead gently 6-8 times. Shape into a 6-1/2-in. round loaf; place on a greased baking sheet. Using a sharp knife, make a shallow cross in top of loaf. Whisk remaining egg; brush over top., Bake until golden brown, 30-35 minutes. Remove from pan to a wire rack. Serve warm.

Steps:
- Preheat the oven to 350ºF.
- Lightly grease a baking sheet or line it with.
- parchment paper.
- In a large bowl, stir the flour, sugar, baking soda, baking powder and salt together.
- In a separate bowl, beat the eggs, buttermilk, and oil together.
- Make a well in the center of the dry ingredients and pour in the buttermilk mixture.
- Add the caraway seeds and raisins.
- Stir until a soft dough has formed.
- Shape the dough into a large ball on a lightly floured board (flour your hands if necessary for easier handling).
- With a sharp knife, make a cross on the top.
- Place on the prepared pan.
- Brush the top with the milk.
- Bake in the center of the oven until golden brown, 30 to 40 minutes.
TRADITIONAL IRISH CURRANT SODA BREAD

- Sift flour, sugar, baking soda, baking powder and salt.
- Stir in currants and milk.
- Combine until well blended.
- Dough will be sticky.
- Turn out onto floured board and knead 10 times, until smooth.
- Shape into an 8" round loaf.
- Place on ungreased cookie sheet.
- Cut an"X" with a knife into the top of the loaf.
- Bake at 375 degrees for 45 minutes.
- Remove from oven; pour sugar and water glaze over the top and return to oven for an additional 10 minutes.
