NON-ALCOHOLIC CHICKEN MARSALA
A spin on chicken marsala...sort of. I don't like wine. In fact, I don't drink, so I just adapted a well-known recipe :P

Steps:
- Trim the fat from the breasts and remove the white tendons running through the tenderloins. Place each breast between sheets of wax paper and gently pound with a meat mallet until less than 1/4 inch thick. Dust the chicken with the flour until well coated on all sides. Sprinkle with salt and pepper.
- Heat the oil in a large skillet over medium-high heat until very hot but not smoking. Use the tongs to add the chicken breasts in a single layer and saute for 3 to 4 minutes on each side, until firm. Remove to a serving platter and cover with aluminum foil to keep warm.
- Add the mushrooms to the skillet and saute until the mushrooms have given up their juice, about 8 minutes. Stir in the parsley. Season to taste witih salt and pepper. Remove from the heat and whisk in the butter, 1 T at a time.
- Pour the sauce over the chicken and serve immediately.

Steps:
- Melt smart balance in saute pan. add mushrooms, garlic and shallot. Saute 5 minutes until mushrooms are done.
- Stir marsala into mushrooms and stir up any browned bits; simmer and reduce marsala by half.
- whisk cornstarch into a bit of the chicken broth until smooth; add remaining chicken broth. Pour this into reduced marsala and bring to boil; simmer 2-3 minutes to thicken sauce. Turn off heat and cover pan.
- heat a large skillet to medium heat.
- Season cutlets with salt and pepper to taste.
- Spray cooking spray into the pan and cook about 2 -3 minutes per side. Do this in batches, if necessary.
- Place chicken into marsala-mushroom sauce. Allow to simmer several minutes until chicken is cooked through and sauce is thickened.
- Serve chicken over cooked pasta or brown rice; garnish with parsley.

- Lightly salt and pepper your chicken breasts, then dip them into your flour of choice. Cover both sides with flour, shaking off the excess. Save 1 tbsp of the flour for later.
- In a large pan (emphasis on large!) over medium heat, add 1 tbsp of olive oil and 1 tbsp of butter or 2 tbsp of ghee. When shimmering, add flour coated chicken and fry until golden brown on both sides, about 3-4 minutes per side. Transfer to a plate and cover with foil.
- In the same skillet with the drippings from the chicken, add 1 more tbsp of butter or ghee and melt. Add mushrooms for 3-4 minutes until browned on both sides The major tip here is to not crowd your mushrooms or they will steam. Give them some space in a single layer and they will get nicely browned.
- Add your shallots and garlic to the mushrooms, scraping up any bits from the bottom. Mix in the 1tbsp of flour. Pour in the chicken broth & vinegar and simmer over medium heat for about 5-7 minutes, until reduced by half and thickened.
