SUNDAY CHICKEN
This was my mother's favorite recipe for Sunday-hence the name. It makes an excellent recipe for Sunday dinner, because it can be prepared ahead of time and left to bake while you attend church. The leftovers also freeze well. -Don Harksen, Dothan, Alabama

- Preheat oven to 350°. In a large bowl, combine soups, 1/4 cup butter and rice. Pour into a greased 13x9-in. baking dish. Top with chicken pieces. Drizzle chicken with remaining butter. Sprinkle with salt, pepper and paprika. , Bake, uncovered, 2 hours or until chicken juices run clear and rice is tender.

NONNA'S TRADITIONAL MEATBALLS

- Preheat the oven to 350 degrees F.
- Combine the ground beef and ground pork in a large bowl. Set aside.
- In a food processor, combine the milk, eggs, garlic, basil, parsley, cayenne and salt. Process until pureed.
- Add the wet ingredients to the meat and mix to combine. Then add breadcrumbs and Romano, and gently combine; be careful not to overwork the meat.
- With the help of an ice cream scoop (for even sizing), shape the mixture into 2-ounce meatballs and place on a baking sheet.
- Transfer the baking sheet to the oven and bake the meatballs for 30 minutes.
- Add the meatballs to the Roasted Tomato Sauce and simmer for another 30 minutes.
- Preheat the oven to 425 degrees F.
- In a deep lasagna pan, add the garlic, anchovies, olive oil, red pepper flakes and salt. Place the pan on the stovetop and saute for 5 to 7 minutes to soften. Remove from the heat and add the canned tomatoes and oregano; mix well.
- Transfer the pan to the oven and roast until the tomatoes are nicely charred on top, 45 minutes. Let cool, then blend to your liking with an immersion blender; we like our sauce a bit chunky, but feel free to puree if you choose.
NONNI'S SUNDAY CHICKEN
My Nonna always served this with a simple green salad and a risotto Milanaise on Sundays. We now know that eating chicken fats are unhealthy, but I would diet all month just to have this.

- 1. Nonni's Roasted Chicken Wash and dry chickens. Place in a large roasting pan (big enough for both birds). Rub each bird all over with the olive oil. Fill the cavities of each bird with 2 whole cloves of garlic, and ½ bunch each of rosemary and sage, reserve some herbs for the tops of the birds. Rub the remaining chopped garlic and herbs on the outside of the chickens. Season with salt and pepper. Roast at 325 degrees until legs move easily (2 hours approximately). Remove chickens to a platter to rest. Add some the white wine and the chicken broth to the drippings in the pan. Scrape up all the bits of goodness from the pan and simmer. While the 'au jus' is simmering, cut each chicken into 8 pieces, place on a serving platter. Serve the sauce separately with the Italian bread for dunking.

- pound chicken breast to 1/4 inch season with salt and pepper then lightly flour and set aside.
- in a large skillet heat evooand a tablespoon of butter.
- heat to medium high and cook chicken breast on each side to a light golden brwon and set aside.
- add 2 tablespoons of evoo and 1 tablespoon butter and saute shallots and garlic until just tender.
- deglaze pan with chicken broth and lemon juice.
- season to taste with salt, pepper and pepper flakes.
- reduce by 1/2 and then swirl in 1 tablespoon of cold unsalted butter.
- brush a shallow oven proof baking dish with olive oil and arrange chicken breast in one layer overlapping if need be.
- top chicken breasts with artichokes, capers and sun dried tomatoes.
- pour sauce over chicken then sprinkle with lemon zest, chopped parsley and basil.
- drizzle with olive oil cover with foil and bake at 350 for 40 minutes.

- Preheat oven to 350°. Using a sharp knife, trim stalks and root end of fennel bulb. Cut bulb lengthwise into quarters; cut and remove core. Cut fennel into 1-in. wedges. Place fennel, carrots and three of the onion quarters in a shallow roasting pan, spreading evenly., Cut lemon in half; squeeze juice into a small bowl, reserving lemon halves. Stir minced garlic, honey, salt, pepper flakes and pepper into juice., Place chicken on a work surface, neck side down. With fingers, carefully loosen skin from the tail end of the chicken breast. Spoon juice mixture under skin of breast; secure skin with toothpicks. Place garlic cloves, lemon halves and remaining onion inside chicken cavity. Tuck wings under chicken; tie drumsticks together. Place chicken over vegetables, breast side up., Pour orange juice over chicken. Roast 1-1/2 to 2 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°. (Cover loosely with foil if chicken browns too quickly.), Remove roasting pan from oven; increase oven setting to 450°. Remove chicken from pan; tent with foil and let stand 15 minutes before carving., Meanwhile, return roasting pan to oven; roast vegetables 10-15 minutes longer or until vegetables are tender and lightly browned. Using a slotted spoon, remove vegetables from pan. If desired, skim fat from pan juices and serve with chicken and vegetables.

- In a large resealable bag, combine the first seven ingredients. Cut chicken pieces into thirds; place in the bag and shake to coat. , In a large nonstick skillet, brown chicken in butter on all sides; remove and keep warm.
