NOT YOUR AVERAGE SALSA

A very different but wonderful EASY salsa. It's my spin on an original recipe. It is a hit wherever I take it. The ingredients are somewhat out of the ordinary, but WOW are they AWESOME when mixed!!!

Steps:

  • Mix everything together.
  • Refrigerate 4-6 hours to allow flavors to blend.
  • Serve with Corn Chip Scoops.

2 (10 ounce) cans Rotel tomatoes & chilies, undrained
1 (15 ounce) can white corn, drained
1 (15 ounce) can black-eyed peas, rinsed and drained
1 red bell pepper, chopped
1 green bell pepper, chopped
6 green onions, sliced thin
8 ounces paul newman family recipe Italian salad dressing
1 1/4 ounces ortega taco seasoning mix, with jalapeno & onions

I came up with this recipe when I was trying to use up some tomatoes and didn't have any peppers in the house in order to make traditional salsa. It's become a fav in our house! No more peppers for me!

Steps:

  • Prepare tomatoes and onions.
  • Add hot sauce and spices (I have also used red pepper and Tupperware's Southwest Chipotle for variety) to tomato/onion mixture.
  • Store in airtight container in the fridge and enjoy!

2 cups tomatoes (chopped, pureed, whatever your preference-I prefer a mixture of chopped and pureed)
1 small onion, chopped
1 -2 tablespoon hot sauce (2 for hot, 1 for mild)
salt and pepper

  • Place all of the ingredients into a food processor or high-speed blender. Pulse in 2 second bursts until all ingredients are chopped and combined. Note: Don’t over blend your salsa. You want a fine texture, but not a puree.
  • Leave salsa covered and refrigerated for a couple of hours before you are ready to serve. This will bring all the flavors together.
