SWEET AND SALTY GRANOLA

A great granola recipe that's a perfect addition to cereal, yogurt, fruit or even just to enjoy plain.

Sweet and Salty Granola image

Steps:

  • Preheat an oven to 275 degrees F (135 degrees C). Cover a 10x15 inch pan with wax paper.
  • Mix brown sugar and water in a microwave safe bowl. Cook in microwave to dissolve the sugar, about 1 minute. Combine oats, salt, walnuts, and cinnamon in a large bowl. Stir in sugar mixture, honey, and vanilla extract. Mix well. Pour mixture onto the prepared pan, spreading evenly. Create clusters by squeezing small handfuls of the oat mixture together.
  • Bake in the preheated oven for 20 minutes. Remove from oven and gently stir granola using a spoon. Return to the oven and bake for an additional 25 minutes. The granola will be slightly browned and will continue to harden as they cool.

Steps:

  • Preheat oven to 325 degrees.
  • In a large mixing bowl, stir together the oats, nuts, coconut, brown sugar, cinnamon and salt.
  • Add the oil, honey and water.
  • Toss until well combined.
  • Spread the mixture evenly on a cookie sheet.
  • Bake for 40 minutes or until lightly browned, stirring every 10 minutes to keep the mixture from sticking.
  • Let it cool.
  • Then stir in the fruit or chocolate chips.
  • Store in an air tight container.

10 cups oats
2 cups chopped walnuts or 2 cups slivered almonds (or both)
1 1/2 cups coconut
1/2 cup brown sugar
2 teaspoons cinnamon
1/2 teaspoon salt
2/3 cup vegetable oil
2/3 cup honey
2/3 cup water
2 cups raisins or 2 cups chocolate chips (optional)

Steps:

  • Preheat oven to 300.
  • Stir oats, nuts, pepitas, sunflower seeds, chia seeds and salt in a large bowl.
  • Heat brown sugar, maple syrup, and olive oil in a large measuring cup in microwave for about 1 minute or until the sugar dissolves. Pour over oat mixture in mixing bowl and stir well.
  • Place on a parchment lined 15 x 10 jelly roll pan and pat into one layer. Bake at 300 for about 30-40 minutes, stirring as necessary until light to dark gold, (your choice) however the less you stir the more clusters this will make. When baked to your liking, remove from oven.
  • Sprinkle and lightly press dried fruit on top of granola but do not stir it inches Wait until this cools and then break into pieces while mixing in fruit.
  • Feel free to mix up your fruit/nut combo. The original recipe also contains coconut flakes. Imagine that with macadamias and dried pineapple. Hmm. Time for a new batch!

  • In a separate bowl, whisk syrup, oil, brown sugar and vanilla until smooth. Pour the wet mixture over the oats and stir until mostly combined. Use your hands to continue mixing, making sure that the oats and nuts are well coated.
  • Dump the mixture onto prepared baking sheet and spread into an even layer (I like to flatten it with the back of a spatula). Bake for 25 minutes, then use a spatula to mix around the granola. Return to the oven for 10 minutes, toss again, then return to the oven for another 5-10 minutes until evenly golden brown. Place the pan on a wire rack to cool (see note about finishing salt). Add dried fruit after cooling, if desired.
