STIR FRIED GREEN BEANS WITH SHRIMP AND GARLIC
Recipe by Eric Banh and Sophie Banh - Food & Wine Magazine - 01/2009, doubled and served with steamed Jasmine rice, this Vietnamese side dish becomes a great main course. :) Wine suggestions: Eric Banh's suggestion: Washington State Riesling. F&W pick: Floral, citrusy 2005 Badger Mountain Update:07/11/2009 - it seems that by just placing salt in the recipe too much is used, this happened to a friend of mine and I was going to put in a warning. There are many items that can make it salty; so wait, until after you add the beans and the low-sodium chicken broth - that is a good time to add the salt!! You can always add more.:)

STIR FRIED BEAN SPROUTS WITH SHRIMP
I found a stir fry bean sprout recipe on a web site. I made some changes, and added a few ingredients that we like. We really liked how light yet filling this dish was. We did notice however the soy sauce at the bottom of our plate when we finished. I suggest that the next time I make this, I'll mix a bit of corn starch with soy sauce or water and add it to thicken the sauce up a bit. This can be served as a main dish and serve 2, or it will serve 4 as a side dish.

Steps:
- Mix the brown sugar in the soy sauce until dissolved and set aside.
- In large frying pan or wok, heat the oil on medium high.
- Saute carrots, scallions, and mushrooms, just until tender.
- Add the gingeroot and garlic, and season with salt and pepper. Add red pepper flakes if using.
- Stir until well mixed.
- Add the shrimp and soy sauce mixture and saute 3-5 minutes until the shrimp are cooked through.
- Add bean sprouts and stir until heated through. These don't take long. Just be sure not to overcook the beansprouts. They are best when still cruncy.

- Heat 2 teaspoons oil in a large skillet over medium heat. Add green beans and season with salt and peppers. Sauté for 2-3 minutes until beginning to soften. Reduce heat and carefully pour 1/4 cup water in hot skillet (it will sputter, so be careful of steam) and cover pan with a tight fitting lid to steam for 10 minutes. Monitor carefully to make sure the water does not completely evaporate before the beans have steamed, adding more if necessary so they do not burn.
- Meanwhile, in a small bowl whisk together coconut aminos, rice vinegar, garlic, ginger, sesame oil and sriracha and set aside.
- In a separate small bowl whisk arrowroot and 4 teaspoon water to make a slurry to thicken the sauce. Set aside.
- Once beans have steamed, uncover and add shrimp and toss. Add in coconut aminos sauce ingredients, mixing to ensure it cooks evenly.
