- In a small bowl, cream shortening and sugar until light and fluffy. Beat in the egg, extract and salt. Add flour; mix well. Drop rounded tablespoonfuls of dough 2 in. apart onto ungreased baking sheets., Bake at 375° until edges begin to brown, about 10 minutes. Cool for 1-2 minutes; remove from pans to wire racks. Sprinkle warm cookies with sugar.

These ultra-thin, crisp cookies are a snap to make and have a fortune cookie-inspired flavor. Serve alongside a homemade or purchased fruit salad to increase your fruit servings for the day while still satisfying your sweet tooth. To make ahead: Store cookies in an airtight container, with parchment or wax paper between layers, for up to 2 days. INGREDIENT NOTE: White whole-wheat flour is light in color and flavor but has the same nutritional properties as regular whole-wheat flour. It can be ordered from the King Arthur Flour Baker's Catalogue at shop.bakerscatalogue.com. Whole-wheat pastry flour can be substituted. Find whole-wheat pastry flour in the natural-foods section of large supermarkets and natural-foods stores.

Steps:
- Position racks in upper and lower thirds of oven; preheat to 300°F.
- Coat 2 large baking sheets with cooking spray.
- Mix flour, sugar, butter, orange zest, orange juice and vanilla in a medium bowl until smooth.
- Spread 1 tablespoon of batter into a 2 1/2-inch circle on the prepared baking sheet.
- Repeat with the remaining batter, making 6 cookies per baking sheet, spacing them about 4 inches apart.
- Bake the cookies until lightly browned around the edges, switching the pans back to front and top to bottom once halfway through, 16 to 18 minutes.
- Immediately and carefully transfer the cookies from the pan to a wire rack using a thin metal spatula. Let cool completely.

CRISPY ORANGE BEEF
Steps:
- Season flank steak strips with salt and pepper, then toss with cornstarch. Shake off excess.
- Fill a large frying pan with enough oil to cover the bottom by 1/4 to 1/2-inch. Heat the oil to 365 degrees F. First add noodles to oil and let cook for 3 to 4 minutes. Take out noodles and then, working in batches, fry the steak. Do not crowd pan. Drain on paper towels. Set aside.
- For the sauce: Heat the oil in a medium frying pan over medium heat and cook the garlic until fragrant; do not let the garlic brown. Add orange marmalade, 1/2 cup beef broth, soy sauce, and chiles. Bring to a boil and reduce to a simmer for 5 minutes. In a small bowl, stir cornstarch into remaining 1/2 cup beef broth. Stir cornstarch mixture into simmering sauce. Return to a simmer for 3 to 4 minutes until sauce thickens.
- Make a bed of the frisee lettuce on a platter. Put the crispy noodles on top and then the beef. Pour sauce over beef and serve.
ORANGE CREPES
Extremely fancy dessert that you would be proud to serve your company. Absolutely delicious and easy to put together. I keep some crepes frozen at all times so that if I need an emergency dessert - all I have to do is microwave and make sauce. It will depend on the size of crepes that you make how many this will yield and I cannot tell you for sure as I always make a double or triple batch to store some.

- Combine softened cream cheese and orange rind and set aside to blend.
- Combine eggs, flour, salt, and milk. Beat until smooth. Let stand 30 minutes.
- For each crepe - pour ¼ cup batter in hot lightly greased 6 ½ inch skillet. Cook until lightly browned on both sides. Stack crepes between sheets of waxed paper and freeze until you need them.
- You can thaw these in bulk in your oven or a couple at a time in the microwave. I don't freeze them filled but do the filling after they are thawed.
- To make sauce - heat concentrated orange juice in pot and thicken slightly with corn starch. Pour over filled and rolled crepes and then sprinkle one teaspoons orange liqueur on top to serve.

- Lay beef strips out in a single layer on a baking sheet lined with paper towels. Allow to dry in the refrigerator for 30 minutes. In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, salt and soy sauce. Set aside.
- Meanwhile, combine rice and water in a medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 20 minutes, or until rice is tender. Add more water at the end if necessary.
- Heat oil in a wok over medium-high heat. Toss dried beef in cornstarch to coat. Fry in the hot oil in small batches until crispy and golden brown; set aside. Drain all of the oil from the wok except about 1 tablespoon.
- Add orange zest, ginger and garlic to the remaining oil, and cook briefly until fragrant. Add the soy sauce mixture to the wok, bring to a boil, and cook until thick and syrupy, about 5 minutes. Add beef, and heat through, stirring to coat. Serve immediately over steamed rice, and garnish with broccoli.

- Beat shortening with electric mixer for 2 minutes or until creamy.
- Gradually add sugar and beat for 3-4 minutes until mixture is light and fluffy.
- Add the egg and mix well.
- Add the orange extract and orange zest and blend well.
- Add the flour and salt to the creamed mixture and mix until well blended.
- Drop dough by teaspoonfuls(or use a cookie scoop) approximately 2 inchs apart on a baking sheet which has either been lightly sprayed with non-stick spray or coated with parchment paper.
- Bake the cookies at 375 degrees for 11-12 minutes or until the edges brown lightly.
- Cool on the baking sheet for 2-3 minutes then move to wire racks to cool completely.
