- Heat oven to 350 degrees F.
- Crush 28 cookies finely; coarsely chop remaining cookies. Mix crushed cookies with butter; press onto bottom and 2 inches up side of 9-inch springform pan.
- Beat cream cheese and sugar in large bowl with mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Stir in chopped cookies. Pour into crust.
- Bake 55 min. to 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.

- Mix Oreos and butter.
- Press them down in a greased 9inch spring form pan.
- In a large bowl, cream together remaining ingredients until well blended.
- Pour into spring-form pan.
- Break up 8 Oreos and drop on top of the batter.
- Bake for 45-60 minutes at 300 Deg F.
- Don't bake till it cracks.
- Cool to room temperature and chill in the refrigerator before removing pan.

- To make the cake: Preheat the oven to 350°F and grease two 9 inch round baking pans and line the bottom with parchment paper. In a large bowl stir together sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil and vanilla and mix on medium speed 2 minutes. Add boiling water and mix until it's smooth. Divide batter into 2 prepared pans and bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in the pans, than remove from pans to wire racks upside down (this flattens domed cakes) and cool completely. To make the filling: In a large mixing bowl mix heavy whipping cream until firm peaks form. In another mixing bowl beat cream cheese and sugar until it's smooth. Combine cream cheese and whipped cream and stir in crushed Oreo. To make the ganache: In a sauce pan over a low heat melt chopped milk chocolate, remove from the heat and stir in heavy cream. Stir until it's smooth and pour over the cake. (if it's too runny cool it a little until ganache is thickened but still thin enough to drip down the sides of the cake). To Assemble the Cake: Spread filling on bottom layer of cooled cake, carefully place the second layer on top of filling, then spoon chocolate ganache on top of the cake. Garnish with chocolate chips and whipped cream if desired.

This is very rich, if you like chocolate. I found this recipe as a chocolate truffle cheesecake in Taste of Home, however I've changed it into an Oreo cheesecake. I hope you enjoy. You will use a whole package of Oreos, so no snacking : )

- In a small bowl, combine Oreo crumbs and butter. Press onto the bottom of a greased (only bottom) 9-inch springform pan. Take your 16 cookies and line the sides (cookies should be standing up; you may need to trim the 16th cookie)(also may need more or less if have bigger or smaller pan).
- Heat oven to 325°F.
- For filling, melt chocolate chips in a small heavy saucepan or microwave; stir until smooth. Remove from the heat; add cream and mix well. Set aside.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add cocoa and beat well. Add eggs; beat on low just until combined. Stir in vanilla and reserved chocolate mixture just until blended. Breakup the remaining cookies from the package, should be larger pieces (I break the cookie twice). Pour over crust.
- Bake for 45-50 minutes or until center is almost set (mine is done at 35 min, just make sure to keep an eye on it).
- For topping, melt chocolate chips in a heavy saucepan or microwave, stir until smooth. Stir in cream and vanilla, Kahlua and Irish cream; mix well. Spread over filling. Cool pan on a wire rack for 10 minutes. cool 1 hour longer. Refrigerate overnight.
- Remove sides of pan. Just before serving, garnish with whipped creme, optional. Refrigerate leftovers. Yield: 12 servings.

CHEESECAKE FACTORY'S OREO DREAM EXTREME CHEESECAKE
Just earlier this year, Cheesecake Factory released their new Oreo Dream Extreme Cheesecake, featuring a layer of chocolate fudge cake, chocolate icing, oreo cheesecake, oreo mousse, and more chocolate icing. By combining a few different recipes, including a few by Todd Wilbur, I was able to come up with a clone that tasted just like the original. The only difference was that, instead of spreading an extra layer of chocolate icing on top, I made a chocolate ganache. I've included the recipe for it and will let you decide what to spread on top. While this recipe is certainly time consuming, it's definitely well worth it and will be SURE to impress any company! :-)

- Preheat the oven to 350 degrees F.
- Make the chocolate cake by combining the sugar, egg, and vanilla in a medium bowl and mixing with an electric mixer on high for 2 minute. Add the oil and shortening and mix well, then add the water and mix until smooth.
- In another medium bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Pour this dry blend into the bowl with the wet ingredients and mix until smooth. Pour into a well-greased 10-inch springform pan and bake in the preheated oven for 25 minutes.
- While the cake is in the oven, prepare chocolate icing. Once the cake is completely cool, spread icing over the top of the cake, reserving some for garnishing the cake later. Freeze cake with icing for 1 hour.
- Prepare the oreo cheesecake layer by mixing the heavy cream, sugar, and vanilla in a medium bowl with an electric mixer on high until the cream forms stiff peaks. Mix in the softened cream cheese until smooth. Spread 1/3 of the mixture over the icing on the cake. Place whole oreo cookies in a single layer across the entire cake. Follow with the remaining cheesecake mixture. Chill for 1 hour.
- Make the oreo mousse layer by mixing ½ packet of the powdered gelatin with the hot water. Refrigerate until set. Once set, place in cold water to soften gelatin enough to loosen it from the pan. Place softened gelatin into a double boiler and melt.
- In a separate double boiler, melt the chocolate, being careful not to burn it. Add melted chocolate to gelatin and mix well.
- Whip egg yolks by hand in a small bowl to soft foamy peaks. Mean while, bring honey to a boil. Pour hot honey onto the yolks stirring constantly. Fold the melted chocolate into the yolk mixture. Heat the milk in a small saucepan. Stir the milk into the chocolate mixture.
- In a large bowl, whip the cream to soft peaks and fold into the chocolate mixture. Add the crushed oreos to the mixture and mix well.
- Pour enough mousse over the cheesecake layer to form a layer about ½ inch thick. There may be mousse left over. Chill for at least 2 hours or overnight.
- Prepare chocolate ganache layer by whisking together the egg, cream, and sugar in a medium metal bow. Set the bowl over water that is simmering in a medium saucepan over medium/low heat (you can also use a double boiler pan for this) and whisk for 6 minutes, or until thick. Remove the bowl from the heat, add the chocolate chips (not the mini chocolate chips), and mix with a spoon until smooth. Spread over the oreo mousse layer. Chill at least 1 hour.
- Load the reserved chocolate icing into a piping bag. Remove cake from springform pan and pipe icing into 12 even circles around the side of the cake. Lay ½ oreo cookie with cream filling removed back onto each mound of icing.
- Press mini chocolate chips around the sides of the cake. Press firmly so that the chips stick. Chill the cake for at least another hour, then use a serrated knife to cut the cake into 12 slices.
- Serve with a mound of whipped cream and oreo cookie pieces to the side.

- Crust:
- Mix 2 cups cookie crumbs, melted butter, brown sugar, and cinnamon in a medium bowl; firmly press mixture evenly into bottom and 1 inch up sides of a 10-inch springform pan.
- Bake at 350º F. for 5 minutes; set aside.
- Filling:
- In a large bowl, beat cream cheese at medium speed of an electric mixer until smooth.
- Gradually add 1 1/4 cups sugar, beating well.
- Add 1/3 cup whipping cream, flour, and 1 teaspoons vanilla; beat well.
- Add eggs, one at a time, beating after each addition.
- Pour 1/3 of batter into prepared pan.
- Top with 1 1/2 cups crushed cookie pieces; pour in remaining batter.

- Sour Cream Layer:

- Turn oven off and leave in oven 30 minutes.
- Remove cheesecake and let cool completely on a wire rack.
- Chocolate Glaze:
- Combine 1 cup whipping cream and chocolate chips in a saucepan; stir over low heat until chocolate melts; stir in 1 t vanilla.
- Pour mixture over cheesecake while still warm.
- Refrigerate at least 8 hours before serving.
- Remove about 1/2 hour to 1 hour before serving, remove ring from springform pan.
- Decoratively place 14-16 whole oreo cookies around edges of cheesecake.
- Serve chilled.
- Cook time does not include chill time.
