ALFREDO'S OF ROME'S ORIGINAL FETTUCCINE ALFREDO

The Original Fettuccine Alfredo was created in 1914 by Alfredo Di Lelio, concocted to tempt the palate of his pregnant wife who had lost her appetite. Until now, the Original Fettuccine Alfredo has been a secret recipe, passed on from generation to generation. At the Alfredo restaurants, the fettuccine noodles are made fresh daily from a mix of three different flours, durum and organic eggs. For home use, however, the cook can purchase fresh fettuccine noodles at most supermarkets and deli's.

Steps:
- Cook the fettuccine noodles in 1 gallon of salted boiling water for three minutes.
- At the same time, mix the butter at room temperature in a bowl with the grated cheese until the cheese almost dissolves, forming a smooth cream. If using a mixer, this should not take more than three minutes at which time the noodles will be ready.
- Strain the pasta leaving just a small amount of water and toss the noodles with the Alfredo sauce. Plate the preparation.
- Cheese lovers may want to sprinkle additional grated cheese on top.
FETTUCCINE ALFREDO SAUCE

Steps:
- Melt butter in large saute pan.
- Add garlic and onions, saute until brown.
- Add broth and cream and reduce for several minutes.
- Slowly add the cornstarch/water mixture stirring until the sauce begins to thicken slightly.
- Do not over thicken as the parmesean cheese will also act as a thickener.
- Add the parmesan cheese, parsley, and salt & pepper.
- Taste test and add more seasoning if needed.
- Combine with fettuccini noodles and toss.
- Serve immediately in warm bowl.

- Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat. Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.

- Preheat oven to 250°F.
- Melt butter in a heatproof serving bowl in middle of oven, about 5 minutes.
- Cook fettuccine in a 6- to 8-quart pot of boiling salted water until al dente.
- Reserve 1/2 cup pasta cooking water, then drain fettuccine in a colander. Immediately toss fettuccine with butter and salt in bowl, then slowly add 3/4 cup cheese, tossing constantly and adding enough of cooking water to keep pasta moist. Season with salt and pepper to taste, then sprinkle with remaining cheese.
CLASSIC FETTUCCINE ALFREDO
This is restaurant's claim to fame. It is easy, and can be finished tableside with a flair, just like the pros do it. Nothing can go wrong with this dish, as there are few ingredients. Just have your ingredients ready and a big spoon and fork to toss with. If you do want to finish it in the dining room, have a sterno burner ready for your chafing dish or an electric skillet set on low and have your ingredients in attractive containers.

- Cook Noodles in salted water according to package directions, approx 10-15 minutes.
- Drain well and place in a container (chafing dish or skillet) large enough to allow enough room to toss slippery noodles without accident.
- Place over low heat or sterno.
- Add butter in several hunks to the noodles and stir gently until it melts and coats them well.
- Add the cream and stir in a generous amount of black pepper.
- (Use a peppermill here if you have one).
- Add the cheese, saving a small amount for later use on top of portions (Cheese is sometimes grated into the dish, but I like to have mine ready).
- Stir as mixture thickens and clings to noodles.
- Serve immediately.
- Pass the remaining cheese.

FETTUCCINE ALL'ALFREDO
I found this recipe in my "Four Ingredient Cooking" by Joanna Farrow. She states that this is a simple recipe invented by a Roman restaurateur called Alfredo and that he served it with a gold fork and spoon. This recipe says it serves four, but I would imagine alot of people will think it only serves two, so up this recipe as you see fit to serve your families appetites. This is not a garlic flavored recipe but one for the original recipe, so might want to serve with very seasoned tasty main dish/meat. Or you might want to add some minced 1/2 tsp. minced garlic to the butter in the beginning before adding the cream.

- Melt butter in a large pan. Add the cream and bring it to a boil. Simmer for 5 minutes, stirring constantly, then add the Parmesan cheese, with salt and freshly ground black pepper to taste, and turn off the heat under the pan.
- Bring a large pan of salted water to a boil. Drop in the pasta all at once and quickly bring the water back to a boil, stirring occasionally. Cook the pasta for 2-3 minutes, or according to the instructions on the packet. Drain well.

ALFREDO SAUCE
Alfredo de Lello, a Roman restaurateur, created this rich, silky sauce, which is meant to be tossed with fettuccine, but it can also be used in many other ways: Drizzle it over seared chicken breasts, simmered beans or roasted vegetables, or toss it with any number of ingredients. - In a medium bowl or large measuring cup, whisk the cream and egg yolk together until combined; set aside.
- In a medium saucepan, heat the butter over medium-high. Add the garlic and sauté until fragrant and sizzling, about 2 minutes. Pour the cream mixture into the garlic butter, reduce heat to medium and cook, stirring frequently, until mixture is hot but not boiling, about 5 minutes.

You will not find a better Fettuccine Alfredo other than at Alfredo's in Rome, Italy. - Grate the cheese, black pepper and nutmeg if you need to.
- Put 4 quarts of water to boil.
- Cooking: Set small frying pan in mid-high heat. Add the butter and the cream to the frying pan and mix well.
- Stir the sauce frequently and add the black pepper, salt and nutmeg, boil and stir frequently until the sauce becomes heavier, then reduce the heat. Add the pasta to the boiling water along with some salt and cook to your liking.
- Once the pasta is cooked, drain the pasta and add it to the sauce. Add the grated cheese to the sauce and pasta, and mix until the cheese is absorbed by the sauce.

- Cook pasta according to directions on package. Drain and toss with one tablespoon of butter, cover and set aside.
- In a medium sauce pan over low heat, heat cream and 3 tablespoons of butter, stirring constantly. When cream begins to simmer mix in a small amounts of Romano cheese, stirring constantly, until all cheese is added and sauce has reduced. It should be thick and easily cover the back of a spoon.

The absolute best Alfredo sauce. You do not want to use a grated parmesan that you buy on a shelf. When you cook with that type, your Alfredo goes from a sauce to a gooey mess. You want to buy a very good and very hard parmesan in triangle form. Also, make sure the cream doesn't boil too much or there will not be enough liquid to make the Alfredo sauce smooth.
