MEDITERRANEAN ORZO SALAD

Mediterranean Orzo Salad image

Steps:

  • Make the dressing: Combine the olive oil, lemon juice, garlic and a pinch each of salt and pepper in a jar. Shake well.
  • Make the salad: Bring a pot of water to a boil. Add the orzo and cook as the label directs. Drain and let cool.
  • Combine the orzo, chickpeas, red and yellow tomatoes, olives, feta, parsley and red onion in a large mixing bowl and pour the dressing over the top; stir to combine. Taste and add salt and pepper, if needed. Refrigerate at least 1 hour before serving. Top with more feta and parsley.

1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 small clove garlic, minced
Kosher salt and freshly ground pepper
8 ounces orzo
1 cup canned chickpeas, drained and rinsed
1 cup red grape or cherry tomatoes, halved
1 cup yellow grape or cherry tomatoes, halved
1 cup pitted kalamata olives, halved
1 cup crumbled feta cheese, plus more for topping
2 tablespoons minced fresh parsley, plus more for topping
1/2 red onion, diced

Lemon Orzo image

Steps:

  • In a large saucepan, bring 2 quarts of water to a boil. Add 2 teaspoons salt and the orzo. Return the water to a boil and simmer uncovered for 9 to 11 minutes, until the orzo is al dente. Drain.
  • Transfer the orzo to a bowl and stir in the lemon zest, lemon juice, olive oil, dill, 2 teaspoons salt, and 1 teaspoon pepper. Fold in the feta and serve hot.

Parmesan Garlic Orzo image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain.
  • Melt butter in a skillet over medium heat; cook and stir garlic in melted butter until lightly browned, about 5 minutes. Stir orzo into garlic mixture and mix in Parmesan cheese, milk, parsley, salt, and black pepper.

  • In a large mixing bowl, combine the grape tomatoes, green onions, bell peppers, parsley, dill, olives and capers (hold the feta for now). Add the orzo pasta.
  • Make the dressing. In a small bowl, combine the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano and a good pinch of kosher salt and black pepper. Whisk to combine.
  • Pour the dressing over the salad and toss until well combined and the orzo pasta is well coated with the dressing.
