- Place Parmesan cheese, olive oil, onion powder, garlic powder, pepper, salt, and potatoes into a resealable plastic bag. Seal the bag, then shake to coat the potatoes with the seasoning. Spread the potatoes over a baking sheet.

RIDICULOUSLY EASY OVEN POTATO WEDGES
I was scrambling to make something to go with an "interestingly" spiced roast that my mum made, and came up with this combination of spices for potatoes You don't really need to cut the potatoes into wedges or any particlar shape, I never do. just make sure the lumps are around the same size

- Preheat oven to 375 degrees F.
- Dice, cube or chop the peeled potatoes into whatever shape you feel like making them.
- Rinse then thoroughly in cold water, drain well and transfer to a large bowl.
- Add oil and toss the potatoes around so they are evenly coated.
- Add all of the spices and the cheese and toss so they are evenly coated.
- Place on a baking pan in one layer (preferably lined) and bake for around 30-40 minutes, depending on person preference of potato texture.
- Suggestions! It's really really handy to line the pan before you bake them, or else you will have a sticky baked on mess on your pans that takes an awful lot of elbow grease to get rid of. You could add lemon juice to the potatoes to give them an extra fresh taste.

- Preheat oven to 400 degrees Fahrenheit.
- Scrub potatoes.
- Cut each potato into 6 to 8 long wedges.
- Toss wedges in oil, just enough to coat.
- Sprinkle seasoning on top and toss to coat.
- Lay out on an ungreased baking sheet.
- Bake for 30 minutes.
- Take out of oven and allow to cool.
- Leave on baking sheet and put into freezer to flash freeze.
- TO FREEZE: After an hour or two (depending on your freezer), check and make sure wedges are frozen. Place frozen wedges in labeled freezer bags and return to freezer.
- TO SERVE: Pull out however many wedges you want to serve; place on a greased or nonstick baking sheet. Bake in a 450 degree Fahrenheit oven for 30 to 45 minutes (depending on the size of your wedges). These can also be deep fried.

ROASTED POTATO WEDGES

- Place a rimmed sheet tray into the oven and preheat oven to 450 degrees F.
- Slice each potato into 6 wedges. Add the potato wedges to a pot of cold salted water. Bring to a boil, reduce heat, and simmer until the potatoes are barely tender, but a knife can be pushed through with just a slight resistance, about 6 minutes. Drain potatoes and add to a large mixing bowl. Drizzle potatoes with olive oil and toss with BBQ seasoning, salt, and pepper.
- Carefully remove the hot sheet tray from the oven and quickly add the seasoned potatoes to them. You want the pan to stay as hot as possible. This will help to crisp up the potatoes while they roast. Place the sheet pan back into the oven and roast until golden and crisp, 20 to 25 minutes, flipping 1/2 way through the cooking time.
- Remove from the oven and toss with fresh herbs.
BAKED POTATO WEDGES
