BARBECUED SPAM SANDWICHES

I came across this recipe about 16 years ago. I know this sandwich sounds a bit strange, being Spam and all, but I have to admit it's not a bad tasting sandwich. It's the only thing I've ever made with spam.

Barbecued Spam Sandwiches image

Steps:

  • Slice the lunch meat into thin slices. Combine the sliced lunch meat and barbeque sauce in a large skillet over medium heat. Cook until heated through. Spoon meat and sauce onto the bottom halves of the toasted bread. Top with coleslaw, and then the other half of the pieces of bread.

Broiled SPAM® and Cheese Open Face Sandwiches image

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place the three slices of bread onto a baking sheet. Stir together the luncheon meat and Cheddar cheese in a bowl. Press the meat and cheese mixture on top of each slice of bread.
  • Broil in the preheated oven until the sandwiches are hot and the topping is beginning to brown on top, 3 to 5 minutes.

Steps:

  • In a saute pan, heat oil and saute onions until caramelized, 5 to 10 minutes.
  • Toast bread, either on the grill top or toaster.
  • In a pan with butter, cook SPAM until browned, about 5 minutes per side.
  • Spread your favorite sandwich spread (mustard or mayo) on your toast; I prefer a nice spicy brown mustard. Add SPAM, grilled onions and pickle slices. Add lettuce and tomato or pickled jalapenos if it floats your boat. Sometimes you can switch it up and use RAW ONION, instead of grilled. Go crazy! It's your SPAM; do what you want.
  • Serve with American fries and a cold PBR. YES! AMERICA!

1 tablespoon unsalted butter
3 slices SPAM (about 1/4-inch thick)
Mayonnaise or mustard, for serving

Here's a unique recipe that has been in my spouse's family for 3 generations. It was probably created during World War II as a new way to prepare SPAM®, which was widely used in that time of shortages and rationing. These open-faced sandwiches are delicious and economical and are loved by his entire family. They are great for breakfast, lunch, or dinner!

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine luncheon meat, eggs, Cheddar cheese, and onion in a bowl. Add mayonnaise, chili sauce, salt, and hot sauce. Mix well.
  • Spread meat mixture over hamburger bun halves. Place on a baking sheet.

Toasted Spam Sandwiches image

Steps:

  • Mix all ingredients together in medium mixing bowl.
  • Spread the mixture onto 6 slices of bread or 4 bottom portions of the buns. Place under a broiler until the cheese melts. Set aside.
  • Toast the remaining bread or buns under the broiler. Place the toasted bread or bun on top of each broiled sandwich.
  • Serve warm.
