These are by far the best paleo pancakes that I have tried. Super easy and quick too! Top with organic honey.

- Beat eggs in a bowl until smooth. Mix almond flour, tapioca flour, almond milk, vanilla extract, baking soda, baking powder, and salt into eggs until batter is just combined.
- Heat a lightly oiled griddle over medium-high heat or heat an electric frying pan. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

- In a medium mixing bowl add the eggs, vinegar, maple syrup, and olive oil and whisk the ingredients together until well blended. Add the almond flour, tapioca flour, 1/2 cup plus 1 tablespoon of cassava flour, sat and baking powder. Whisk together until smooth but slightly lumpy. Keep in mind not to over mix the batter which can deflate the pancakes. Let the paleo pancake mix set for five minutes to activate the baking powder.
- Heat a griddle or frying pan on medium-low heat. Spray with cooking spray. Scoop ¼ cup of the batter onto a heated griddle or pan, about 3 small pancakes, making sure they do not touch so they cook evenly.
- Heat each side on medium heat for about 2 minutes per side or until the sides start to bubble and set. If they start to burn turn the heat down even if it takes longer. It is well worth the wait than eating burnt pancakes!
