PAN FRIED WHITE FISH
Steps:
- Unwrap fish but leave it on the butcher paper. Season with salt and pepper on flesh side only. Sprinkle generously with flour, and then shake off the excess.
- In a 12-inch non-stick skillet, heat 2 teaspoons of olive oil over medium high heat until hot but not smoking. Place the fish in the pan skin side down. Cook until golden, about 3 to 4 minutes. Turn the fish over and cook until the flesh is just cooked through and is no longer translucent, about 3 more minutes, depending on the thickness of your fish.

This is a very easy method to make any type of fish fillets. Choose mild-flavored fish - flounder, halibut, cod, catfish, or tilapia are great candidates.

PAN FRIED WHITING FISH
You can use other flat fish such as flounder or sole. I have found whiting to have little to no small while cooking. Best served with my recipe # 516674 Sweet Dilly Tartar sauce. We also enjoy serving this fish with Alexia Smart Classic Roasted Straight Cut Fries. The prep time includes the time the fish needs to sit in the refrigerator after breading

Steps:
- In shallow dish mix panko bread crumbs and seasonings together. In other shallow dish whisk eggs and Crystal hot sauce. Dip fish in eggs turning fish over and over 3 times. Then dip fish in panko bread crumbs turning twice and patting the bread crumbs into each fillet. Sit on a plate. Once all fish are breaded cover with plastic wrap and place in refrigerator for 15 minutes.
- Heat oil/butter over high heat until bubbling (approx 1 1/2 - 2 minutes). Add half the fillets and turn to medium high heat. Cook fish 3 1/2 - 4 minutes per side making sure it turns a nice golden brown color.
- Remove from pan and place on paper towel covered plate to drain. Serve with condiment of your choice. We prefer my Sweet Dilly Tartar Sauce recipe # 516674.

- Heat 1/2 the butter in a large skillet over high heat, and fry 2 of the fillets for about 3 minutes on each side, or until the fish flakes easily when tested with a fork. Transfer the fillets to a serving platter and keep warm. Repeat with the remaining butter and fillets. Serve immediately, with tartar sauce and lemon wedges.

Steps:
- 1. If possible, buy your whiting fresh from the seafood market and have them fillet the fish. I wash the whiting quickly in vinegar, than rinse with cold water and pat dry. Place whiting in a flat container and sprinkle with pepper and a little salt. Set aside in fridge while you make the breading.
- 2. In a large mixing bowl, combine the corn meal, flour, black pepper, cayenne pepper, salt and garlic powder.
- 3. Heat a large skillet with oil on the stove. Make sure the oil is at high temp but not smoking.
- 4. Take the whiting fillets and dredge them in the flour one at a time and shake off excess. Place the whiting in the skillet. Cook each side until golden brown (about 5 minutes each side). Fish will "float" when done. Drain on paper towel.
- 5. You can also throw in some scallops or shrimp(pictured with the fish) following the same directions for the whiting. Enjoy delicious fried whiting!

HOW TO PAN-FRY FISH - ALLRECIPES
From allrecipes.com
- Pick Your Fish. Not all fish was made for frying. You're going to want to go with more of a neutral-flavored fish that isn't overly oily — most types of white fish will do.
- Prep the Fish. One pound of skinless fillets, or four 4-ounce skinless fillets, (about ½-inch thick) is the perfect amount for serving a family of four.
- Make the Breading. Here's where you can really get creative! We're going to be following Jeannie's Kickin' Fried Fish recipe, but feel free to omit, add, or replace ingredients as you wish.
- Coat the Fish. Next, dip each fillet into the egg mixture, and then gently press it into the crumb mixture on both sides. Transfer the coated fillets onto a plate and refrigerate for about 15 minutes to help the crumbs set.
- Fry the Fish. Preheat the oven to 300 degrees F — you'll see why in a second. Heat 1 ½ teaspoons olive oil and 2 teaspoons butter in a large skillet over medium heat (cast iron is best since it heats evenly and gives you an even, crispy crust).
