BAKED HALIBUT WITH CRISPY PANKO
This fish will just melt in your mouth! I like to serve over a quinoa-kale salad. Also, please don't use regular bread crumbs as they are too dense.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Stir panko bread crumbs and melted butter together in a bowl until evenly coated.
- Pour enough chicken stock into an oven-proof skillet to cover bottom; arrange halibut fillets in skillet. Drizzle lemon juice over fillets; season with salt and pepper. Spread a think layer of Dijon mustard over each fillet; press bread crumb mixture over mustard layer.
- Place skillet in the preheated oven and cook until fillets flake easily with a fork and topping is browned, about 20 minutes.

PANKO BAKED FISH
I like to cut down on calories and I like the taste of fried Fish so I started baking my fish in a Panko and selfrising mixture and it just great and easy to.

Steps:
- 1. Peheat oven to 350degree. One cookie sheet pan, sprayed with nonstick cooking.
- 2. If large pieces of fish is used cut in half. Place pieces in a large mixing bowl. Add half the olive oil on top of the fish and sprinkle with the seasonings. Make sure that the fish is covered well with the olive oil and seasonings.
- 3. Use tongs for this if you like. Put the flour and Panko in a large plastic bag and shake mixture together. Put 1 or 2 pieces of fish in the bag and shake well to coat each piece, shake off excess if desired.
- 4. Place pieces of fish not touching on sprayed sheet pan. To the oil that is left in the bowl add the other half of the oil to it and add 1-tablespoon of that mixture to each piece of fish. Bake for 20to25-minutes or until slightly browned.
BAKED FLOUNDER WITH PANKO AND PARMESAN
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking dish.
- Arrange flounder fillets on prepared baking dish and brush with 1 tablespoon butter. Combine remaining 3 tablespoons butter with bread crumbs, Parmesan cheese, salt, pepper, and thyme in a bowl; sprinkle over flounder.
- Bake in preheated oven until fish flakes easily with a fork, 15 to 20 minutes. Carefully transfer fillets to a plate with a spatula.

PESTO PANKO BAKED FISH
From my notes. I guessed but you can do it by sight. You basically coat the fish with pesto and cover it in panko crumbs and bake!

- Wash and dry fish fillets.
- Coat fish with pesto.
- Now coat fish with panko, pressing to make it stick.
- Place in a baking dish and bake in 350 degrees F. at 7 minutes per inch of fish or until done.

- HEAT OVEN TO 425F/217C. Line a pan with parchment paper and place a grill/rack on top. Spray rack with oil for easy clean up.
- TOAST BREADCRUMBS: Pan fry Panko crumbs with butter, lemon zest and Cajun seasoning over medium heat in a large pan for about 5 minutes or until golden brown, stirring occasionally. Be careful not to burn them. To toast crumbs in oven instead: place crumbs on pan and bake in heated oven for 5-7 minutes, shaking half way through, until golden brown.
- COAT FISH WITH MAYO, THEN PANKO: Stir mayo mixture ingredients together and brush on fish in a thin layer on both sides. Sprinkle one side lightly with salt and pepper (skip if cajun seasoning is salty). Then dip pieces of fish in crumbs, patting to help adhere crumbs to fish. Place on the rack on top of pan. Sprinkle any remaining crumbs over fish.
- BAKE: Bake fish in middle rack of oven for 7-10 minutes, depending on thickness of fish. One inch (2.5cm) thick fish will take about 10 minutes. Half inch, about 7-8 minutes. An instant thermometer will read 135F/57C. The fish should flake easily and be slightly translucent (not dry). Serve with lemon wedges and your preferred dipping sauce (note 3).
