LOVE BIRDS - CHICKEN IN PASTRY

Steps:
- Preheat oven to 400 degrees F.
- Season the chicken with salt, pepper and rosemary. Cut each piece of chicken in half across the breast giving you 8 equal portions. Heat the oil in a nonstick skillet over medium-high heat. Lightly brown the chicken on both sides, 5 minutes total. Remove from heat.
- Line a baking sheet with parchment paper. Cut pastry into 8 pieces. Place a piece of cheese on each pastry square and top with spoonfuls of fig preserves and the chicken pieces. Pinch and seal the dough up and over the meat and cheese, seal with egg wash, flip the pastry packets over and brush the tops with remaining egg wash. Bake 12 to15 minutes, until golden.
- For entree portions, simply leave chicken breast whole and cut the pastry into quarters. Trim off excess dough and use it to decorate the pastry with small cut outs such as heart shapes.
BIRD OF PARADISE
This chicken is to die for! I got it out of a cookbook from our library 9 years ago and use it alot. You can add more chicken just up your amounts of cheese and sherry.

- Whisk the egg and milk together, place cheese in a shallow bowl.
- Dip Chicken into egg"wash" then into cheese.
- In a skillet melt the butter.
- Add the coated chicken and brown for 5-6 minutes on each side.
- Add Sherry.
- Cover and cook on med-low heat for 35 minutes or until cooked through.
PARROT CHICKEN
A friend of mine has a parrot that bit him. I kiddingly suggested this sauce when he wanted to get rid of the bird. That's where it got it's name. This is a version of a recipe I got from Curtis Stone. It's too tasty for words. :-)

- 1. Mix the hoisin, honey, soy sauce, garlic (be sure and cut those nasty little woody stem parts off before cutting) and ginger in a bowl to blend. Set the marinade aside. Using a sharp knife, score the thighs on both sides, do no cut all the way through. Add the chicken to the marinade and toss to coat. Cover (I use a zip lock bag) and refrigerate for at least an hour, but preferably overnight. I have prepared this in the morning and fixed it in the evening, it comes out great.
- 2. Line a cookie sheet or baking pan with heavy duty foil (saves clean-up). Place your chicken pieces on the foil with a little of the marinade. Place under the broiler (middle shelf)for about 15 minutes until it looks browned and a little crispy around edges, turn and broil the other side.
- 3. Remove from broiler, place the chicken on a plate, sprinkle with toasted sesame seeds and add cilantro for garnish. You may want to make extra. You don't want to see the sad faces when it's all gone. Leftovers (lol) keep well and can be re-heated the next day.
- 4. TIP: Run your hands over the stainless steel faucet (or anything stainless steel) to get the garlic smell off your hands. It works.
EASY ONE-SKILLET CHICKEN THIGHS WITH CARROTS
Chicken thighs and carrots are cooked on top of the stove, making a hearty dish for any time of year, especially if you prefer not to heat up the oven. Serve with fresh broccoli, green peas, or a salad, along with some good bread to get every last drop of the tasty sauce.

- Blot chicken thighs with paper towels and sprinkle with salt and pepper.
- Melt butter with olive oil in a 12-inch skillet over medium heat. Place chicken thighs in the hot oil and cook until browned, about 4 minutes per side. Remove chicken from the skillet and keep warm.
- Add carrots, onion, and minced garlic to the same skillet, stirring to coat with pan drippings. Season with salt and pepper and cook for about 2 minutes. Nestle browned chicken thighs into the vegetables, pour wine and 2 tablespoons water over everything, and cook for an additional 2 minutes.
- Cover, reduce heat to low, and simmer until carrots are fork-tender and chicken juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and vegetables from the skillet with a slotted spoon.
- Combine cornstarch and 1 tablespoon water in a small bowl, stirring to dissolve any lumps. Add slurry to the drippings in the skillet and bring to a boil, stirring constantly; cook until thickened, 3 to 5 minutes.
- Pour sauce over chicken pieces and vegetables and sprinkle with fresh parsley to serve.

- This is one of the most popular dishes on my menu. I have a restaurant in Mumbai, so I visit India often, and here you can see how I've been influenced by one of my favorite Indian dishes: Tandoori chicken. The bird is first marinated in spiced yogurt before being roasted in a very hot oven. For garnish, I make a zesty sauce from the marinade and serve the pieces of chicken with whole grilled fresh chiles. The secret ingredient here is the hot sauce. I always use Frank's, a Louisiana-based sauce with a distinct red pepper flavor, which is neither as hot nor as sharp as other brands. As a result, the marinated chicken is certainly spicy, but not incendiary. If you want more heat, I encourage you to eat the chiles. The noodle topping is dramatic, and you'll always see it at the restaurant, but at home you can consider it optional.
- Preheat the oven to 450 degrees F.
- Trim any excess fat from the chicken. Rinse and pat dry. Place the chicken quarters in a large bowl. Measure out 1 cup of the Spicy Yogurt Marinade and reserve for the sauce; refrigerate in a small covered container.
- Pour the rest of the marinade over the chicken. Turn the pieces to make sure they are all well-coated. Cover and refrigerate for at least 8 and up to 24 hours.
- Remove the chicken from the marinade and arrange the pieces on 1 or 2 half-sheet pans or large baking sheets. Discard the chicken marinade.
- Roast for 40 minutes, until the chicken is tender and lightly browned and the juices run clear when the thighs are pricked with the tip of a small knife. Transfer the pieces to a platter and tent with foil to keep warm.
- While the chicken is roasting, make the sauce. Boil the chicken stock in a medium saucepan over high heat until it is reduced to 1 cup. Whisk in the reserved 1 cup Spicy Yogurt Marinade and cook just until heated through. Do not boil, or the yogurt will separate. Keep the sauce warm.
- As soon as the chickens are done, preheat the broiler. Toss the chiles with the oil to coat lightly and spread them out on a broiler rack or small baking sheet. Broil the chiles about 4 inches from the heat, turning them a couple of times, until they are blistered and lightly browned, about 5 minutes.
- To serve, layer the chicken and chiles on a large platter. Pour the sauce around the chicken. Top with the Fried Rice Noodles. Serve with lime wedges to squeeze over the chicken.
- To make the marinade, grind the peppercorns, cumin, coriander seeds, and cardamom in a spice grinder or use a mortar and pestle. Transfer to a medium bowl. Add the chili powder, garam masala, and salt. Add the hot sauce, yogurt, cream, and soy sauce and whisk until smooth and well blended.
- Add vegetable oil to reach about 2 inches up the sides of a large saucepan or a wok. Heat the oil over high heat to 340 degrees F. Separate 1 bundle of thin rice noodles into 2 portions. Working with 1 portion at a time, add the noodles to the oil. They will puff up almost immediately. Using a large wire skimmer, transfer to paper towels to drain.
CREAMY CHICKEN AND CARROTS
Mushroom soup makes a creamy gravy for this tender chicken. "You can also make this with other vegetables, or serve it over thick-sliced potatoes instead of rice," suggests Valma O'Neill of Utica, Michigan.

- Add the chicken to a bowl, along with 2 tablespoons water. Use your hands to massage the water into the chicken until it is absorbed. Add the rest of the marinade ingredients to the chicken, mix well and set aside.

Note: If this sounds too spicy for you, you can add chili oil to taste rather than the entire amount called for.
