Copycat Carrabba's Pasta Carrabba image

Steps:

  • Cut breasts in half and place side by side on a platter. Drizzle with the vinegar and oil. Cut basil leaves and sprinkle over the breasts; sprinkle salt and pepper. Refrigerate at least 1 hour.
  • Grill the breasts or bake in a 350 degree oven for 30 minutes. Set aside.
  • Peel and finely chop shallots. Saute in butter 1 minute. Add cream, salt and pepper to taste. Boil to reduce slightly to the consistency of a light sauce, just thick enough to coat a spoon. Add mushrooms and peas and cook another 2 minutes.
  • Cook pasta, drain and shake out excess water. Thinly slice chicken. Add to pasta and gently toss with sauce, along with cheese. Serve immediately.

6 chicken breasts, skinned & boned
6 tablespoons balsamic vinegar
1/2 cup extra virgin olive oil
1/4 cup fresh basil leaf
salt
fresh ground pepper
3 tablespoons butter
4 medium shallots
2 cups cream
6 ounces fresh mushrooms
1 cup frozen English peas
salt
fresh ground pepper
1 (9 ounce) package fresh fettuccine
2 ounces fresh grated parmesan cheese

Steps:

  • 1. Boil pasta, drain. Set aside. Meanwhile, sauté onions, garlic and red pepper flakes in oil over medium heat til onions are soft.
  • 2. Add white wine and cook until nearly evaporated. Stir in tomatoes with their juice plus a little water (to clean out the can) till slightly thickened. ( 3 to 5 minutes)
  • 3. Taste and add salt and pepper to your liking.
  • 4. Add drained pasta, toss with cheese and pancetta, if using.

4 oz cavatappi pasta or elbow macaroni
3/4 c onions, chopped
2 clove garlic, minced
1/4 tsp red pepper flakes
1/8 c olive oil
1/2 c dry white wine
14 oz can(s) petite diced tomatoes, with juice plus small amount water
salt and pepper, to taste
1 c shaved parmesan cheese plus some for reheating

Steps:

  • 1. Prepare an outdoor grill for direct cooking with medium heat. Bring a large pot of water to a boil over high heat. Add salt to taste. 2. Season the chicken breast halves with the grill seasoning, and brush on both sides with the grill baste. Let stand at room temperature while the grill heats. 3. Brush the grill clean. Lightly oil the grate. Put the chicken on the grill. Cook with the lid closed as much as possible, until the chicken feels firm when pressed on top about 10 minutes. Transfer to a carving board and let stand while making the sauce and cooking the pasta. 4. Heat the oil over medium high heat in a large skillet. Add the mushrooms and cook, stirring occasionally, until the mushrooms are lightly browned, 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the ALfredo sauce and peas and bring to a simmer. Cut the chicken across the grain into 1/2 inch thick slices and add to the skillet. Season with salt and pepper. Remove from the heat. 5. Add the fettuccine to the boiling water. Stir well to separate the strands. Cook,stirring occasionally, according to the package directions, until al dente. Drain well. 6. Return the fettuccine to its cooking pot. Add the sauce and Romano cheese and toss with tongs until the pasta is nicely coated. Divided the pasta among 4 serving bowls.

2 boneless skinless chicken breast halves, (about 8oz. each, pounded out 1/2 inch thickness)
1 1/2 tsp. Carrabba's Grill Seasoning (see separate post)
2 T Carrabba's Grill Baste (see separate post)
1 T extra virgin olive oil
10 oz. white mushrooms, thinly sliced
2 garlic cloves, minced
2 cups Carrabba's Alfredo Sauce (see separate post)
1/2 cup frozen peas, thawed
kosher salt & ground black pepper
1 lb. fresh fettuccine
1/2 cup (2oz)freshly grated Romano cheese, plus more for serving
chopped fresh flat parsley for garnish

  • Make the sauce by melting 1 tablespoon of butter over medium heat in a large sauce pan. Once completely melted add pancetta and cook until a light golden brown, about 5 minutes. Stir in onions and garlic and cook for 8 minutes or until it becomes a rich, deep golden color. Make sure to occasionally stir while cooking the pancetta and onions.
  • While the onions are cooking, crush or chop the whole tomatoes from the can, do not discard the juices. Add them into the sauce pan along with the leftover juice from the can. Stir in one cup of water and hot pepper flakes. Bring to a boil, once boiling reduce heat to medium-low and simmer for 20 minutes. Remove from heat and stir in the remaining 2 tablespoons of butter. Season with salt to taste.
  • Cook noodles according to package directions. Drain and return pasta to cooking pot. Add the sauce and Romano cheese, stir until combined.
