CREAMY BASIL & TOMATO PASTA
This dish was inspired by combining several different recipes. (Note - we don't like a lot of extra sauce- just enough to cover the pasta - so if you like a lot of sauce, you may want to make a little more).

Steps:
- Heat teaspoon of oil over medium-high heat.
- Add onion and sauté until starting to brown.
- Add garlic and sun-dried tomatoes; sauté 3 more minutes.
- Add tomatoes, pepper, and other herbs. Stir well, reduce heat, cover and simmer about 20 minutes.
- Meanwhile, cook pasta according to directions.
- Add cream cheese, milk, and parmesan to tomato pot and melt over low heat until cheeses are incorporated.
- Add chicken and drained pasta, and mix until blended.

CREAMY BASIL AND RED PEPPER PASTA

Steps:
- Cook pasta in a large pot as directed on package.
- Place the peppers, cream cheese, milk, 1/2 cup basil and Parmesan cheese in blender container, cover and blend until smooth; pour into medium saucepan and set aside.
- Pound the chicken with meat mallet to flatten slightly and grill on George Forman grill or grill pan until cooked through.
- When done using a fork and knife, cut the chicken into bite size pieces; stir into pepper mixture, over medium heat, cook for 5 minutes or until heated through.
- Drain the cooked pasta and add to chicken mixture stirring to blend well; adjust seasonings to suit personal taste.
- Serve topped with additional Parmesan and basil leaves.

CREAMY PASTA BAKE WITH CHERRY TOMATOES AND BASIL
One of my favorite midweek pasta bakes - my whole family loves it and there is not much prep. Once the pasta bake is in the oven, you can make a salad or set the table and then it's time to eat.

Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain, reserving 1 cup of cooking water.
- Heat olive oil in a large skillet over medium heat and cook onion until soft and translucent while penne is cooking, about 5 minutes. Add garlic and cook an additional 30 seconds. Stir in tomato sauce and tomato paste and cook until slightly reduced, about 5 minutes. Add cream and Parmesan cheese and season with salt, pepper, and sugar.
- Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish.
- Stir some pasta cooking water into the sauce and add cooked penne. Remove from heat and stir in cherry tomatoes, 1/2 the mozzarella cheese, and basil. Pour penne mixture into the prepared baking dish and cover with remaining mozzarella cheese.
- Bake in the preheated oven until cheese is melted, about 20 minutes.

A FAREWELL TO BASIL FETTUCCINE
I made this while watching 'A Farewell to Arms' on TV and realized the title suited the intent of the pasta, which was to celebrate the last gleanings from my rather prolific basil patch. If you feel the need to serve this with a sauce, consider a butter garlic sauce or a white wine sauce with chicken. Whatever you choose to accompany this with, enjoy it!

Steps:
- Using a food processor, process basil leaves until chopped very fine. Add 1 1/2 cups of flour and pulse two or three times, or until combined. Add egg, 1 teaspoon oil, and the water until dough forms a ball shape. If dough seems dry, add a bit more water. Wrap dough in a piece of plastic wrap which has been coated in a few drops of olive oil. Refrigerate dough for 2 hours.
- Remove dough from refrigerator, and cut into 6 equal size portions. Run pasta though pasta machine, or roll with rolling pin to desired thickness. Use the additional flour to coat pasta while rolling.
- Allow pasta to dry for one hour prior to cooking.
- Cook in a large pot of boiling water until al dente. This should take only a 3 to 5 minutes, depending on the thickness of the pasta.

PASTA DEBRA (CREAMY BASIL PASTA)
This recipe is dedicated to the wife of a long-time friend, who introduced me to Stravecchio cheese, a premium Parmigiano-Reggiano cheese that is aged for 3 years. Although the cheese has a stronger flavor than regular Parmigiano-Reggiano cheese, the flavor is much smoother. I developed this recipe to showcase the cheese and to thank Debra.

- Serve with Hot ciabatta with cold butter and a vinaigrette salad as accompaniments** This can be made as a main dish by including meat in it, or can be made meatless as a side dish or first course.
- Adjust the amount of meat according to taste; a little, essentially as a flavor enhancement, or in a larger quantity for a more substantial dish If using meat, combine all marinade ingredients in a small plastic bag, add meat, squeeze out air, and seal.
- Knead to distribute marinade, and marinate at room temperature for 30 minutes or longer in the refrigerator.
- Clean and prepare all vegetables, and set aside.
- Bring a generous amount of water with 2 Tbsp of salt to a boil, and add pasta.
- Heat olive oil in a large skillet over high heat, and saute garlic for 15 seconds.
- Add meat, if using, and stir-fry for 1 minute (2 minutes for chicken).
- Add sliced mushrooms, and stir-fry for 1 minute longer.
- Add onions and tomatoes, and stir-fry for 1 minute longer.
- Stir in cream, and bring to a boil.
- Stir in cheese and basil, and continue stirring just until cheese is melted.
- Drain pasta well, and add to sauce in skillet (or return to pasta pot, and add sauce), and toss until pasta is well coated.
- Serve immediately with additional Stravecchio on the side.
- Serve with hot ciabatta and a nice simple salad with vinaigrette dressing (topped with more Stravecchio).

- Place all of the ingredients except for the parmesan into a large pot. Cook on a high heat for 2 minutes, submerging the spaghetti into the water once it's softened enough.
