PASTA MEZZANOTTE

This is perfect for a midnight snack! That is the meaning of the title. However, this too can be used as a main meal with a robust green salad and hot baked bread, what more could you ask for? This comes from Emerils.com. Update - 06/19/2008 remade this several times and I cut the olive oil down by 1/4 cup and increased the red-pepper flakes and fresh parmigiano.

Pasta Mezzanotte image

Steps:

  • Bring a large pot of water to the boil.
  • Add a generous amount of salt to the water and then add the pasta.
  • Cook the pasta, according to package directions, until al dente.
  • Drain pasta and set aside; it will only take a few minutes to prepare sauce.
  • Heat olive oil in a medium skillet over medium-heat.
  • Add garlic and red pepper flakes, and saute until fragrant and garlic is just beginning to turn golden.
  • DO NOT LET GARLIC BURN!
  • Add pasta to skillet, and then add parsley and cheese.
  • Toss together until the pasta is coated with sauce.
  • Serve immediately.

One of my favorite ways to eat eggplant! Use any small pasta in interesting shapes like bowties, rotini, or seashells.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Keep warm.
  • Meanwhile, heat the olive oil and butter in a skillet over medium heat. Add the garlic; cook and stir until softened. Mix in the eggplant. Let the eggplant cook for 5 minutes without stirring. Then stir and cook until tender, about 5 more minutes.
  • Mix in the spinach and season with salt, and pepper. Cook, stirring occasionally, for 3 minutes. Stir in the drained pasta and lemon juice along with 1/2 cup Parmesan cheese. Transfer to a serving dish and top with remaining cheese and cracked black pepper.
