Garlic Oil Sauteed Pasta with Broccoli image

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

  • Tip the pasta into a large pan of boiling salted water and cook according to pack instructions. Meanwhile, bring a smaller pan of salted water to the boil, add the broccoli and boil for 4 minutes.
  • Drain the broccoli and return it to the pan. Lightly mash the broccoli with a potato masher or fork. Finely grate the garlic and zest the lemon, then mix into the broccoli with the chilli flakes and pine nuts. Cut the lemon in half and keep for later.
  • Drain the pasta and return it to the pan. Stir in the broccoli pesto and squeeze over the juice of 1⁄2 lemon. Pour in the olive oil and generously season with salt and pepper. Spoon in the grated Parmesan, toss the pasta well and serve.

Sicilian Pasta and Broccoli image

Steps:

  • Heat the water for your pasta while you prepare the broccoli.
  • In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
  • Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
  • Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.

  • Bring a large pot of salted water to a boil.
  • Clean broccoli & separate florets from the stems. Remove the tough peel from the stems & cut into cubes. Place in steamer & steam to desired tenderness. Reserve the broccoli water.
  • Remove the casings from the sausage. Heat the olive oil to medium high and brown the sausage flattening & chopping until all is browned.
  • Add garlic, fennel seed & red pepper flakes. Cook until garlic is pale brown. Remove from the heat.
  • Add steamed broccoli & 1/2 cup of the broccoli water to the sausage.
  • Add the pasta to the boiling water and cook according to package directions.
  • Scoop out the pasta & add to the sausage & broccoli along with 1/2 cup of the pasta water.
  • Reheat the sausage, broccoli & pasta & stir until the water mostly boils away & forms a nice sauce. 1 1/2 to 2 minutes.
  • If too dry add more water from pasta &/or broccoli.
  • Grate 1/2 ounce of pecorino romano cheese over pasta reserving the remaing cheese for tableside.
  • Salt & pepper to taste.

  • In a large pot of boiling salted water cook rigatoni or fusilli pasta with one tablespoon of oil until al dente. Drain.

  • Put the olive oil in a large skillet and heat.
  • Add the minced garlic and cook slightly (do not brown the garlic).
  • Add the frozen broccoli and cook about 8 minutes stirring occasionally, adding a little water now and then to make steam so that the broccoli cooks.
  • If you are adding chicken, add it now.

  • Cut the broccoli buds into small florets, leaving as short a stem as possible; set aside; cut the remaining broccoli stems into 1/2" pieces; boil them, covered, in the 1 1/4 cups water, lightly salted, for 15 minutes or until very soft.

  • Bring a large (11 by 5 1/2-inch) pot of water to a boil and add 1 tablespoon salt. Remove and discard the bottom third of the broccoli rabe and slice the rest crosswise in 2-inch pieces.
