Steps:

  • Melt the butter in a large ovenproof skillet over medium-high heat. Add the leeks, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the leeks are tender, 8 to 10 minutes. Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. Add the half-and-half and bring to a boil, then reduce to a simmer and cook until slightly thickened, about 2 minutes. Stir in 1 cup fontina until melted.
  • Meanwhile, preheat the broiler and bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the peas in the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain the pasta and peas.
  • Add the pasta and peas to the skillet and toss to coat, adding the reserved cooking water as needed to loosen; season with salt and pepper. Top with the remaining 1 cup fontina and the parmesan. Broil until lightly browned, 4 to 5 minutes.

Steps:

  • Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, mozzarella, and chopped sun-dried tomatoes.
  • For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt, and pepper in a food processor until almost smooth.
  • Pour the dressing over the pasta, sprinkle with the Parmesan and basil, and toss well.

1/2 pound fusilli (spirals) pasta
Kosher salt
Olive oil
1 pound ripe tomatoes, medium-diced
3/4 cup good black olives, such as kalamata, pitted and diced

Steps:

  • Preheat oven to 350'.
  • In a medium skillet, add beef and onion and cook until beef is no longer pink and onion is translucent.
  • Drain off fat and set aside.
  • While beef is browning, in a large pot, cook pasta according to package directions. (I usually cook it a minute less than directed because it will cook while in the oven as well).
  • When pasta is cooked drain and add rest of the ingredients to the pot, reserving 1/4 of the shredded cheese (about 1/2 cup) and blend well.
  • Transfer above mixture to a large buttered baking dish and spread evenly.
  • Top with remaining 1/4 of cheese.
  • Cover and bake at 350' for 20-30 minutes. Uncover the last 5-10 minutes and bake until hot and bubbly and cheese on top is melted.

SAND PASTA--JUST FOR KIDS

This sounds very strange but is quite good and the kids get a laugh out of the name. I even like it. I have listed the ingredients as best I could. I usually add everything to the pan in the amounts that I like, but I needed measurements, so this is what I came up with. You may add more or less of each.

SPAGHETTINI WITH PEPPERS AND SAND

I've served this at several occasions and it has always been a hit. (It's very similar to the "pasta with sand" recipe elsewhere on Recipezaar.) Recipe is from Jeff Smith's "Frugal Gourmet Cooks Italian."

Steps:

  • Place a large pot of water on to boil for the pasta.
  • Remove core and seeds from pepper and slice thinly--julienne style.
  • Heat a large frying pan and add 2 tablespoons of the oil.
  • Add the pepper and saute over high heat for two minutes.
  • The peppers should remain a little crisp.
  • Remove from the pan and set aside uncovered.
  • Heat the frying pan again and add the remaining oil and the garlic.
  • Saute just a few seconds.
  • Add the bread crumbs and red pepper flakes.
  • Gently toast the mixture, stirring often, until very lighly browned.
  • Boil the pasta until al dente and drain well.
  • Return to the pot and toss with the red bell pepper and the bread crumbs.
  • Salt and pepper to taste if desired.
  • NOTE ON DOUBLING: I have had some difficulty doubling this recipe easily.
  • It works, but you need to tweak the preparation a bit.
  • First, I'd recommend toasting the breadcrumb mixture in two batches (1/4 cup at a time).
  • It can also be difficult to toss the pasta evenly, so I'd start with a 1/3 of the pasta, add a third of the breadcrumb mixture and then add the second third and so forth.
  • You may need to add a little extra olive oil as well.

  • Cook the pasta in a pot of salted water until just tender, drain well and place in a large serving bowl.
  • Before the pasta is done, heat a non stick pan with the olive oil. When the oil is hot, add and cook the garlic until fragrant, about 30 seconds, add the red pepper flakes and salt to desired preference then add the breadcrumbs and mix well ensuring the breadcrumbs are saturated with the oil, if they look a bit dry, add a tablespoon of butter at a time and mix in to get the desired consistency.
  • Serve with Parmesan cheese available for topping. A green salad as a side would make this a light meal.
