PEACHY TOSSED SALAD
I like to serve this refreshing salad in the summer, when the lettuce in my garden is fresh and sweet peaches are in season. It's a real treat, especially when served with pork. -April Neis, Lone Butter, British Columbia

- In a blender, combine the first eight ingredients. While processing, gradually add oil in a steady stream. Process until blended., In a large salad bowl, combine the spinach, lettuce, peaches and bacon. Drizzle with dressing; toss to coat. Serve immediately.

PEACHY-BEEF TOSS SALAD
This main dish salad is hearty enough to satisfy the meat eater in the family with the lighter fare for others. The wonderful tangy taste of the dressing is good enough to find it's way into your next marinade!

Steps:
- Cut a thin slice off one side of the meat if necessary in order to make a flat side.
- Place flat side down, cut into thin lengthwise slices.
- Then cut each slice into narrow strips about 1/8 to 1/4-inch thick.
- In a salad bowl combine romaine, spinach, peaches, avocado, tomatoes, and roast beef strips.
- To make dressing, in a screw top jar combine salad oil, vinegar, horseradish, Worcestershire sauce, bottled hot pepper, 1/2 tsp salt and 1/8 tsp pepper.
- Cover and shake well to mix.
- Pour dressing on top of salad to coat meat and vegetables.
- Serve!

- Slice three peaches; set aside. Cut the remaining peach in half; place in a blender. Add the sugar, lemon juice, vinegars and salt; cover and process until blended. While processing, gradually add oil in a steady stream. , In a large bowl, combine the salad greens, romaine, onion and cucumber. - Place the salad greens, strawberries and peanuts in large salad bowl.
- Drain and if desired rinse peaches; reserve 2 Tbsp of the syrup.
- Place 10 peach slices in bowl with greens.
- In blender container, add remaining peach slices, reserved syrup, vinegar, oil, sugar and pepper.
- Cover and blend on high about 15 seconds or until smooth.

- Partially freeze beef. Slice across the grain into thin strips; set aside.
