FANTASY PEANUT BUTTER FUDGE

This recipe has been passed around my family for years, came from the back of a jar of marshmallow creme. Incredibly easy, decadently delicious! I make it every year for Christmas - a nice alternative to traditional chocolate fudge.

Fantasy Peanut Butter Fudge image

Steps:

  • Line a 9-inch square pan with foil, with ends of foil extending over sides of pan; set aside.
  • Place sugar, butter and evaporated milk in large heavy saucepan. Bring to full rolling boil on medium heat, stirring constantly. Boil 4 minute or until candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat.
  • Add chocolate and marshmallow creme; stir until completely melted. Add walnuts and vanilla; mix well.
  • Pour immediately into prepared pan; spread to form even layer in pan. Let stand at room temperature 4 hours or until completely cooled; cut into 1-inch squares. Store in tightly covered container at room temperature.

FANTASY FUDGE (PEANUT BUTTER FUDGE)

This recipe is from the mother of a student, and it is the BEST peanut butter fudge I have ever had. I usually use real butter and not margarine when I cook, so I will substitute the margarine in this recipe. From what I have tasted, however, it is still delicious when made with margarine.

Fantasy Fudge (Peanut Butter Fudge) image

Steps:

  • Combine sugar, margarine, and milk in heavy 2 1/2 quart saucepan. Bring to full rolling boil, stirring constantly.
  • Reduce heat to medium. Continue boiling for 5 minutes, stirring constantly.
  • Remove from heat, and stir in peanut butter.
  • Add marshmallow cream, nuts, and vanilla. Beat until blended.
  • Pour into greased 13 x 9 inch baking pan.
  • Let cool, and cut into 1-inch squares.

Steps:

  • 1. Grease a 9 x 13 pan. Set aside. Get beaters out and ready.
  • 2. Place peanut butter chips, marshmallow crème, and vanilla in a large bowl and set aside.
  • 3. Combine sugar, butter, and evaporated milk in heavy saucepan. Bring to a boil stirring constantly. Reduce heat and cook 4 minutes. stirring constantly.
  • 4. Remove from heat and carefully pour over marshmallow mixture. Beat with beaters until peanut butter is melted and mixture is creamy and all ingredients well incorporated. Pour in prepared pan and set in fridge to harden up about 3 hours. Cut into squares.
