LEMON GARLIC MARINADE FOR CHICKEN
I'm not sure where I got this recipe but it is very good. I usually throw some chicken breasts in a ziploc bag and add this marinade and then freeze. All I have to do for a quick meal is thaw and toss on the grill. This makes enough marinade for about 1-1.5 pounds of chicken breasts. Cooking time reflects marinating time.

Steps:
- Place chicken breasts in a large ziploc bag.
- Mix first five ingredients together and pour over chicken.
- Marinate at least one hour, longer if possible.
- Cook chicken as desired.
- I prefer to grill mine.
- This is wonderful served on a caesar salad.
LEMON GARLIC CHICKEN
I got this recipe from a recipe card many years ago and have enjoyed it ever since. It is simple, reasonably quick to make,low fat and tasty. You may substitute apple juice for the wine.

Steps:
- In a shallow glass dish mix the marinade: lemon juice, wine, half the oil,garlic, honey, oregano, salt& pepper.
- Add chicken to the marinade, turning to coat.
- Cover the dish and refrigerate for 30 minutes.
- In a large skillet heat remaining oil over med.
- /highheat until hot but not smoking.
- Add chicken to skillet (discard the marinade).
- Cook turning once until cooked through (about 20 minutes).
- Place chicken on a serving platter, garnish with lemon slices and fresh oregano.
- Serve.

CREAMY LEMON CHICKEN

- Place the flour in a shallow bowl and season with salt and pepper. Heat a large saute pan over medium-high heat, then add the oil. Dredge the chicken in the flour, shaking off any excess, and place in the hot oil. Cook until golden brown on both sides and cooked through, about 4 minutes per side. Remove the chicken to a plate.
- Add the garlic to the pan, carefully add the wine and, using a wooden spoon, scrape the bottom of the pan to release any flavor stuck to the bottom. Add the cream, Parmesan, lemon zest and juice and some salt and pepper. Bring to a simmer and cook until the sauce starts to thicken, about 2 minutes. Add the spinach, stir and return the chicken to the pan. Cook for 1 minute more, until the spinach has wilted. Garnish with basil and lemon slices.
PERFECT LEMON-GARLIC CHICKEN MARINADE
I put this together when I was making some other Lebanese dishes, and I wanted chicken, but wasn't sure how I was going to make it. So this is what I came up with. One of the ingredients is Sumac- can find in middle eastern markets for sure. Its a dark red spice, that adds a lemony flavor. Its so very good. I like to make this chicken and serve it with Tabouli and Hummus. But I think it would be great with just about anything you choose to serve it with.

Steps:
- If chicken breasts are boneless and thick, I think they turn out better butterflied.
- Peel garlic and crush using a mortar/pestol with a little salt (makes crushing garlic easier) or buy garlic already crushed and place in a small bowl.
- Add lemon juice, olive oil, and sumac, and salt if you bought crushed garlic.
- Mix together.
- Place chicken in ziploc bag, add mixture from bowl. Make sure chicken is coated, seal bag and then place in refrigerator.
- I think it tastes best when marinated for at least 4 hours. But I 'm sure less is fine too.
- Grill chicken until done.
LEMON-GARLIC CHICKEN THIGHS
Serve with lemon wedges and garnish with parsley.

- Combine lemon juice, honey, Worcestershire sauce, and garlic in a non-reactive dish. Add chicken; turn to coat all sides. Cover and marinate in the refrigerator, turning occasionally, for 1 hour.
- Preheat the oven to 425 degrees F (220 degrees C). Spray a shallow roasting pan with cooking spray.
- Remove chicken from the marinade and shake off excess. Arrange chicken on the prepared roasting pan. Pour remaining marinade over top. Sprinkle with pepper and salt.
- Bake in the preheated oven, basting occasionally with marinade, for 20 minutes. Bake without basting until the juices run clear, another 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Melt butter and add the olive oil, lemon juice, rosemary, garlic salt, salt & pepper.
- Take chicken breasts & marinate in mixture.
- Place in the refrigerator for a minimum of 30 minutes.
- Remove chicken from refrigerator.
- Preheat BBQ.
- Leave chicken at room temperature for 15 minutes.
- Place each piece of chicken on separate piece of aluminum foil.
- Cut lemon into 8 slices.
- Place 2 lemon slices, 1/4 of the onions and 1/4 of the garlic under each chicken breast and then place 2 lemon slices, 1/4 of the onions and 1/4 of the garlic on top of each chicken breast.
- Wrap the foil securely around each piece of chicken.
- Place foiled chicken on grill and BBQ on hot coals for 8 minutes. Flip over and BBQ the other side for 8 minutes.
- Ready to serve.

- Melt butter in a skillet over medium-high heat.
- Season chicken with salt and pepper; place in the melted butter. Cook chicken, flipping frequently, until browned, about 5 minutes. Sprinkle 1 tablespoon garlic powder over chicken; flip and sprinkle 1 tablespoon garlic powder on second side. Cook each side for 2 minutes.

EASY PEASY LEMON & GARLIC CHICKEN
A super easy, tasty way to add a bit of life to a boring chicken breast! Preparation time includes minimum marinade time. You can substitute the garlic powder and bottled lemon juice for fresh ingredients if you like but I use them for quickness. Also you can alter the amount of lemon pepper, lemon juice and garlic powder to taste. I sometimes add some chopped chives or mixed herbs if i fancy a change. Just increase the amounts accordingly to marinade more chicken breasts. This chicken is best cooked on a BBQ but as i live in England 9 times out of 10 it ends up on my George Foreman grill!!! Fanastic and served hot or cold.

- In the sandwich bag combine the garlic powder, lemon pepper, salt, lemon juice and olive oil. Give it a good shake.
- Score the chickn breasts lightly on both sides (this helps cut down the marinade time).
- Place chicken breasts into the sandwich bag and close. Give them a good massage and put in the fridge to marinate. If possible leave them over night but 20 - 30 mins is long enough for a great flavour.
- Remove chicken from the marinade and cook in your favourite way until the juices of the chicken run clear (on my George Foreman it takes around 15 - 20 mins depending on the thickness of the chicken breast).
- Et voila! I serve with buttered new potatoes and a crisp salad for a tasty, healthy meal. This chicken is also AMAZING on a BBQ!
