SOY CHICKEN
Found this recipe in "Six Ingredients or Less: Chicken Cookbook" It's so easy and uses ingredients that most of us always have on hand. The sauce tastes great over rice. The recipe calls for a whole chicken, but you could use bone in breasts or thighs or any combination that you would like and adjust cooking time accordingly. This is also good with pork chops.

Steps:
- Place chicken, skin side down, in 9x13 baking dish.
- Combine remaining ingredients in small saucepan and place over low heat until butter is melted.
- Stir to mix well.
- Pour over chicken.
- Bake at 350 degrees for 30 minutes.
- Turn and bake 20 to 30 minutes or until done, basting occasionally.

HANUKKAH CHICKEN
One large potato pancake sliced into wedges is an easy large-format alternative to making individual latkes. Serve them alongside applesauce-braised chicken thighs for a holiday dinner.

Steps:
- Place a rack in oven as close to broiler as possible; preheat broiler. Season chicken on all sides with cayenne, 1 Tbsp. salt, and 1 tsp. black pepper. Let sit 10-15 minutes.
- Meanwhile, working in batches, wring out excess moisture from shredded potatoes and onion in a clean dish towel over the sink (the more liquid you remove, the crispier your latkes will be, so take your time and use several towels if necessary). Transfer potatoes and onion to a large bowl.
- Whisk matzo meal, 2 tsp. salt, and 1 tsp. pepper in a medium bowl. Add egg and whisk to combine. Add to potato mixture and mix to evenly distribute.
- Heat 1/4 cup oil in a 10" ovenproof (preferably cast-iron) skillet over medium-high until shimmering. Carefully transfer potato mixture into hot oil in skillet and use a rubber spatula to spread it into an even layer, pressing to flatten as much as possible. Cook until edges are just starting to brown, about 5 minutes. Brush 2 Tbsp. oil over and transfer skillet to broiler. Broil, checking often to make sure latke isn't burning, until top is crisped and deeply golden brown, 10-12 minutes.
- While latke is in the oven, heat remaining 2 Tbsp. oil in a large skillet over high. Working in 2 batches, cook chicken flat side down until golden brown, about 4 minutes. Turn and cook until other side is golden brown, about 1 minute. Transfer to a plate.
- Cook apples in hot oil and fat in pan over medium-high heat, stirring occasionally, until caramelized and softened, 8-10 minutes. Add wine and cook, stirring occasionally, until reduced by half, 2-3 minutes. Using a slotted spoon, transfer apples to a medium bowl, leaving reduced wine behind in skillet. Add applesauce, thyme, and 3/4 tsp. salt to skillet and stir to combine. Nestle chicken into sauce in skillet. Pile apple mixture over chicken. Cover and cook over medium heat until chicken is cooked through, about 15 minutes.
- Carefully invert skillet with latke onto a cutting board, then slice latke into 8 wedges.
- Drizzle lemon juice over chicken. Toss parsley, lemon zest, and 1/4 tsp. salt in a small bowl. Sprinkle over chicken and apples. Serve chicken with latke wedges alongside.
PASTOR RYAN'S HERB-ROASTED WHOLE CHICKEN
This recipe is from the Pioneer Woman's blog (courtesy of her friend, Pastor Ryan). You can roast more than one chicken in the oven at a time (if you have room) and freeze extra cooked chicken, making it a very economical endeavor. *Notes*: You can use dried herbs in place of the fresh, just be sure to use leaves (not ground spices), and use 1/3 of the amount that is called for. Also, the ingredients/instructions are what is required for EACH INDIVIDUAL chicken that is prepared. The chicken might be nice served with a vegetable and Italian bread, or atop Recipe #11808. - Preheat your oven to 450 degrees while you pick the herbs from their stems. Chop the herbs and add them, along with the salt and pepper, to the canola oil; stir.
- Before applying the herb mixture to the outside of the chicken, take out the bag of giblets and discard them (if there is one), and fill the cavity of the bird with the aromatics. You won't be eating these items, so you can just give them a rough chop / slice / mash.
- Stuff the aromatics into the nether regions of the chicken. No need to tie the bird, but if the legs are sticking out far (which can cause them to overly-brown), you can put a slice in the skin, and stick the leg into that.
- It's important that your whole chicken be patted dry with a clean cloth or paper towel. This will help to ensure a nice crust on your chicken once it's finished.
- Rub the chicken down with your canola-herb-salt-pepper mix.
- Slide your herb-coated chicken(s) into that 450 degree oven for an hour to an hour and fifteen minutes until they are golden brown and have developed a delicious crust.
- The chicken is done when juices between the breast and leg run clear, and an instant-read thermometer inserted deep into the thigh reads 155 degrees F (I found 1 hour and 5 minutes at 450 degrees F worked perfectly for me in my conventional oven).
- Once the chickens have roasted, take them out and let them rest for 10-15 minutes before carving.
- Serve over pasta, or with any sides.

PHARAONIC CHICKEN

Steps:
- Stir together the allspice, 1 1/2 tsp salt, cumin, cinnamon, sugar and olive oil in a medium bowl. Add chicken and marinate for 15 minutes.
- Preheat oven to 425°F.
- Boil the potatoes in water to cover, plus the remaining tsp salt, for about 10 minutes or until tender but not soft. Drain.
- Place the chicken in a single layer in a large baking dish. Bake for 20 minutes at 425°F.
- Remove chicken from oven and arrange potatoes between pieces.
- In a small dish, mix together the garlic and lemon juice. Pour this over the chicken and potatoes.
- Return chicken to oven and bake an additional 12 minutes.
- Sprinkle with cheese and return to oven until cheese melts.
- Serve.
