We had this at a morning meeting, and it's quite tasty! Feel free to substitute or add ingredients (i.e., bacon, swiss cheese, spinach, etc ).

Philly Cream Cheese Brunch Quiche image

Steps:

  • On a lightly-floured surface, roll pastry to a 12" circle. Place in 10" pie plate.
  • Turn under edge and flute. Prick bottom and sides of pastry with fork and bake at 400 for 12 to 15 minutes or until pastry is lightly browned.
  • Combine cream cheese and milk in saucepan. Stir over low heat until smooth.
  • Gradually add cream cheese mixture to eggs, mixing until well blended.
  • Saute onions in butter.
  • Add onions and remaining ingredients to cream cheese mixture and mix well.
  • Pour into pastry shell and bake at 350 for 35 to 40 minutes or until set.
  • Garnish with ham slices and fresh dill, if desired.

1 (10 inch) pastry dough, for 10 inch pie
6 ounces cream cheese, cubed
1 cup milk
4 eggs, beaten
1/4 cup chopped onion
1 tablespoon butter
1 cup finely chopped ham
1/4 cup chopped pimiento
1/4 teaspoon dill weed
1 dash pepper

Steps:

  • Preheat the oven to 350 degrees F. Heavily spray a 12-cup nonstick muffin pan with nonstick cooking spray.
  • Heat a large skillet over medium heat. Add the bacon and cook until crispy, about 6 minutes. Remove the bacon to a plate with a slotted spoon and pour 2 to 3 tablespoons of the bacon fat (see Cook's Note) into a large, heatproof bowl. To the bacon fat, add the crushed corn flakes and Cheddar. Stir the mixture together until it starts to clump. Press the mixture into the cups of the prepared muffin pan. Bake until lightly browned, about 5 minutes. Remove and cool slightly on a baking rack in the pan.
  • Return the skillet to medium-high heat and add the butter. Once the butter is melted, add the onions and cook until softened and starting to brown, 3 to 4 minutes. Sprinkle on the mustard, salt, paprika and pepper. Stir the collard greens into the onion mixture. Continue cooking the greens, stirring occasionally, until wilted, 5 to 6 minutes. Set aside to cool slightly.
  • Whisk together the half-and-half and eggs, then stir in the greens. Pour some of the egg mixture into each crust in the pan to come about three-quarters of the way up and sprinkle on the bacon. Bake until the egg has set and doesn't jiggle, 15 to 20 minutes. Set the mini quiches on a baking rack for 10 minutes to cool. Serve warm or at room temperature.

3 strips thick-cut bacon, chopped
5 cups cornflakes, lightly crushed
1 1/2 cups grated white sharp Cheddar
1 tablespoon unsalted butter
1/2 Vidalia onion, diced
1 teaspoon ground mustard powder
1 teaspoon kosher salt
1/2 teaspoon paprika
1/2 teaspoon freshly cracked black pepper
1 bunch collard greens, stemmed and finely chopped (about 3 cups)
1 cup half-and-half
4 large eggs, lightly beaten

Steps:

  • Preheat oven to 425 degrees.
  • Saute onion in butter until transparent.
  • Cover the bottom of the pie crust with the cream cheese, cut into small pieces.
  • Add the meat and onion and top with the grated Swiss cheese.
  • Mix together the milk and eggs and nutmeg if using and pour over the top.
  • Bake for 15 minutes, reduce the temperature to 350 degrees, and bake for another 30 minutes.

1 frozen 9-inch deep dish pie shell
1/4 cup chopped onion
4 ounces cream cheese
1/4 lb grated swiss cheese
4 large eggs
1 cup milk or 1 cup half-and-half
1/4 teaspoon nutmeg (optional)
1 cup ham or 1 cup seafood, your choice (enough to cover the bottom in a single layer. Also very good with sauteed fresh mushrooms and spinac)

PHILLY CHEESESTEAK QUICHE

This is my own recipe that won First Place in a Quiche Bake-Off that we held in my department today. I used a blend of mild and extra sharp cheddar cheeses. But use any cheese that suits your concept of "Philly Cheesesteak." This recipe fills a 9-inch foil pie pan.

Philly Cheesesteak Quiche image

Steps:

  • Prepare the unbaked pie shell. Preheat the oven to 375F. Preheat a 10-12" skillet on medium heat.
  • Grease the skillet with oil/butter (your choice, but I prefer butter) and add the sliced onion and green pepper. Cook the onions and peppers until they are tender (not mushy) - about 10 minutes.
  • While the skillet is busy, beat the eggs and milk together, and blend in the nutmeg, 1/2 tsp. salt and some ground black pepper.
  • Add the deli roast beef, worchestshire sauce and garlic to the skillet and stir while continuing to cook another 3-5 minutes. (Taste the filling and check the seasoning!) Remove the filling from the skillet when finished and allow to cool for 5 minutes before adding to the custard mixture.
  • Add to the custard mixture the meat/veggie filling and grated cheese. Mix well and pour into the pie shell.
  • Bake the quiche for 45 minutes at 375F. Use a clean sharp knife to test for doneness (poke the center and see if it comes out clean). The center should not jiggle. (If not done - continue cooking another 5-10 minutes.)

FILLING - TO BE COOKED IN A 10-12" SKILLET
1/2 large onion, thinly sliced
1 - green bell pepper, quartered, seeded & thinly sliced
4 ounce(s) deli roast beef, cut into thin strips
1 tablespoon(s) worcestershire sauce
1 teaspoon(s) minced garlic
- oil or butter for cooking
- salt & pepper to taste
REMAINING INGREDIENTS
1 - unbaked pie shell
1 cup(s) grated cheddar cheese
