PHYLLIS'S COFFEE CRUMB CAKE

This cake has about 3/4 of an inch of crumbs.

Steps:

  • 1. While baking, make topping 1 lb. butter 3 tsp. vanilla 2 tablespoon cinnamon 1 tsp. nutmeg 4 cups four 1 1/2 cups sugar (use 3/4 cup regular sugar and 3/4 cup brown sugar) 1 pinch salt
  • 2. slowly heat butter and vanilla. In large bowl, mix all other ingredients and slowly add butter. MIx well. With your fingers put on cake that has been baked and bake another 20 minutes.
  • 3. when cake is completely cooled sprinkle with powdered sugar.

1 box yellow cake mix
4 eggs
1 envelope dream whip
1 1/2 tsp vanilla
1 c water
MIX 4 MINUTES. PREHEAT OVEN TO 350. BAKE 20 MINUTES IN A 9 X 13 GREASED AND FLOURED PAN

Steps:

  • In a large bowl, cream butter and sugar. Beat in eggs and vanilla. Combine the flour, baking powder and baking soda; add to creamed mixture alternately with sour cream. Pour half of the batter into a greased 13x9-in. baking pan. , Combine filling ingredients; sprinkle over batter. Carefully top with remaining batter. For topping, combine the flour, sugars and cinnamon in a bowl; cut in butter until crumbly. Stir in walnuts. Sprinkle over batter. , Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Combine icing ingredients; drizzle over coffee cake.

ICING:
1/4 cup confectioners' sugar
1-1/2 teaspoons whole milk
1/4 teaspoon vanilla extract
