Mamo's Apple Strudel image

Steps:

  • As you peel and dice the apples, sprinkle with lemon juice and mix frequently to prevent browning, or toss in iced water with some lemon juice.
  • Place the apples into a large pot on the stove over medium-high heat. Add the pineapple, sugar, 1 cup water and salt. Cook until the moisture evaporates and consistency of the remaining fruit is thicker than preserves, 30 to 35 minutes. Stir often to prevent burning on the bottom. Cool, then stir in nuts.
  • Refrigerate the apple filling at least overnight. Filling will last in the refrigerator for up to a week in an airtight container.
  • Preheat the oven to 350 degrees F.
  • In a pot, melt the butter over very low heat. A white foam will form as the top layer. Skim off the foam with a spoon. Once the foam is removed, add the oil. Stir and remove from the heat.
  • On a sheet of waxed paper, lay out the first layer of phyllo dough. (Dough dries out quickly, so keep other layers not in use covered with a damp cloth over a sheet of waxed paper.) Using a pastry brush, gently brush the butter/oil mixture onto the entire sheet of dough. Sprinkle with the breadcrumb mixture over the entire surface. Repeat for an additional 4 layers so each roll has a total of 5 layers of phyllo dough.
  • Using a spoon, add a row of the apple filling an inch or two from the bottom of the dough. Do not overstuff or the strudel will burst when baking. Lift the bottom edge of the waxed paper with both hands, each about a third of the way in from the outer edges to support the phyllo as you roll up the dough, jellyroll style. As you roll, fold the sides inwards to form sealed edges as you continue to the end. End with the seam-side down.
  • Coat a baking pan with the butter/oil mixture and place the first rolled dough onto the pan with the seam facing down. Then brush the roll all over with the butter/oil mixture.
  • Repeat the steps above until you have filled the cookie pan with the rolls but keep at least a roll's width between each. Keep at least 2 to 3 inches between the rolls on the baking sheet to ensure even browning.
  • Bake until golden brown, 40 to 45 minutes, depending on your oven. During baking, baste 4 to 5 times with the butter/oil mixture.
  • Cut into pieces while still hot so the crust won't break.

Steps:

  • Preheat oven to 350°. Place raisins, water and extract in a large microwave-save bowl; microwave, uncovered, on high for 1-1/2 minutes. Let stand 5 minutes. Drain. Add apples, 1/3 cup sugar, flour and cinnamon; toss to combine., In a small bowl, mix melted butter and oil; remove 2 teaspoons mixture for brushing top. Place 1 sheet of phyllo dough on a work surface; brush lightly with some of the butter mixture. (Keep remaining remaining phyllo covered with a damp towel to prevent it from drying out.) Layer with 7 additional phyllo sheets, brushing each layer with some of the butter mixture. Spread apple mixture over phyllo to within 2 in. of 1 long side., Fold the short edges over filling. Roll up jelly-roll style, starting from the side with a 2-in. border. Transfer to a baking sheet coated with cooking spray. Brush with reserved butter mixture; sprinkle with remaining sugar. With a sharp knife, cut diagonal slits in top of strudel., Bake until golden brown, 35-40 minutes. Cool on a wire rack. If desired, dust with confectioners' sugar before serving.

  • Place 1 phyllo leaf on a kitchen towel and brush with melted butter.

Salted Caramel-Apple Strudel image

Steps:

  • Make the caramel: Combine the granulated sugar, 1/3 cup water and the salt in a large skillet over medium heat, stirring just until the sugar dissolves. Cook, gently swirling the skillet occasionally but not stirring, until amber, 8 to 10 minutes. Brush any sugar crystals off the side of the skillet with a wet pastry brush. Remove from the heat and whisk in 3 tablespoons butter and the vinegar (the mixture will bubble).
  • Add the apples and cook, stirring occasionally, until soft, about 12 minutes. Strain the apples and transfer to a bowl; set the caramel aside. Toss 1 tablespoon gingersnap crumbs and the cinnamon with the apples; let cool completely.
  • Melt the remaining 5 tablespoons butter in a small saucepan over medium-low heat. Let cool, then skim off the foam and discard. Spoon the melted butter into a bowl, leaving any solids in the pan.
  • Position a rack in the lower third of the oven and preheat to 375 degrees F. Line a baking sheet with parchment paper. Place a sheet of phyllo on a clean kitchen towel or piece of parchment with a long side in front of you. (Keep the remaining phyllo covered with a damp towel.) Lightly brush the phyllo with some of the melted butter and sprinkle with granulated sugar. Layer another sheet of phyllo on top; brush with more butter and sprinkle with more sugar.   • Beat the heavy cream in a bowl with a mixer on medium speed until soft peaks form, then gently fold in some of the reserved caramel (you may need to whisk the caramel first to loosen). Dust the strudel with confectioners' sugar and cut into pieces. Serve with the caramel whipped cream and more caramel; sprinkle with salt.

  • Preheat oven to 350 degrees F.
  • Place 1 layer of phyllo dough on a flat surface. Brush with the clarified margarine and sprinkle with about 2 tablespoons of bread crumbs. Top with another sheet of phyllo dough and repeat the process with the remaining sheets of phyllo dough.
  • In a mixing bowl combine the raisins, sugar, cinnamon, almonds, apples, and apple pie filling. Place the mixture in a log at 1 edge of the phyllo dough layers. Roll the phyllo dough around the mixture tightly and place on baking tray. Bake the strudel in the oven for 10 to 15 minutes or until golden brown in color. Remove from oven and allow to cool slightly. Then slice and serve.

Steps:

  • Mix together apples, brown sugar, lemon juice and zest and apple pie spice. Set aside.
  • Brush 9x13 pan with butter. Carefully unfold phyllo dough package. Take one sheet, lay it in pan, brush with melted butter. Repeat four more times.
  • Top with apple mixture and sprinkle chopped pecans on top.
  • Take the remaining five sheets of phyllo and place on top of apples/pecans, one at a time, brushing each with melted butter.
  • Brush top with melted butter and sprinkle with additional apple pie spice. With a very sharp knife, cut the top phyllo sheets into triangles (cutting diagonally across pan).
  • Bake at 350 for 30-40 minutes.
  • Meanwhile, put sugar, honey and water in saucepan. Over medium heat, bring to a boil while stirring. Turn to low and keep warm.
  • Pour warm syrup over apple strudel.
  • Serve warm or cold.

  • Combine dry pudding mix, nuts, flour, lemon zest and cinnamon in large bowl. Add apples; toss until evenly coated.

When I made these for the family at Christmas time, I had a hard time convincing everyone that I actually made them and didn't buy them from a pastry shop (and I'm known for my desserts)! Steps:

  • Mix apples with lemon juice to prevent browning.
  • Mix in remaining ingredients below apples.
  • Follow directions on phyllo package to keep sheets from drying out.
  • Cut phyllo sheets in half lengthwise (not crosswise).
  • Working quickly, place one cut sheet of phyllo on damp towel (short end towards you) and brush sparingly with melted butter.
  • Sprinkle with 2 teaspoons walnut crumbs.
  • Place another half sheet over the first, brush with melted butter.
  • Place 1/2 cup of filling on short end of phyllo approximately 2 inches from edge.
  • Add some of the juice from the filling as you make each bundle (don't worry if it leaks a little as you roll).
  • Fold end over filling, roll once then fold in both sides by one half inch.
  • Roll to other end.
  • Press side seams and place on a baking sheet which has been sprayed with Pam.
  • Cover with damp towel.
  • Repeat with remaining phyllo dough and filling.
  • One large baking sheet should hold 9 bundles.
  • Once tray is full, brush each bundle with melted butter and bake in preheated 400 degree oven for about 24 minutes.
  • Make second tray while first one is baking.
  • As soon as bundles are done, remove from oven and tilt baking sheet.
  • Brush the run-off juice over each bundle while still warm.
