PIGS IN THE BLANKET AKA STUFFED CABBAGE
I started with Mom's recipe and modified it over the 25 years of my marriage. Also I learned a method of rolling the "pigs" from one of Martha Stewart's books.

Steps:
- Wilt head of cabbage in large pot of boiling water for 5 minutes. Remove cabbage from pot, cool slightly and separate leaves, taking care not to break the leaves.
- Mix ground beef, sausage, cooked rice, garlic salt, paprika and pepper. Form 3 inch balls. Place meatball into cabbage leaf and fold leaf around the ball. Place roll into a large square of cheesecloth, cover and twist ends of the cloth to shape and tighten the roll. Remove cabbage roll and repeat until all filling is used.
- In a large roasting pan which has been coated with olive oil, place layer of cabbage rolls (folded side down), cover with 1 can of tomatoes, and repeat. Pour chicken broth over the layers.
- Preheat oven to 325 degrees F. Cover roasting pan and bake for 2 hours or until until cabbage is tender. Serve with mashed potatoes.

STUFFED PIGS IN THE BLANKET

Steps:
- Preheat the oven to 375 degrees F.
- Open the breadsticks and spread them flat on a cutting board. Cut each breadstick into thirds, crosswise, and stretch each piece until they are about 2 1/2-inches long.
- Onto the center of each breadstick piece, put a small dab of mustard, chili sauce, cream cheese, a few pieces of pickle, Cheddar, red pepper, and scallion or bacon bits. Place a frank just next to the ingredients and roll the breadstick completely around the frank and filling. Brush the "stuffed pigs" with some egg wash and top each with a small bit of the filling that is inside. Place on an ungreased cookie sheet and bake until golden brown, about 11 to 13 minutes. Serve warm.
PIGS IN BLANKETS (GERMAN CABBAGE ROLLS)
We always made these at harvest time when the neighbors got together and filled silo. This is how I learned to make them from my grandmother.

Steps:
- Brown ground beef and onion. Salt and pepper to taste. Drain grease. Stir together rice and browned ground beef and set aside.
- Bring a large kettle of water to a boil and remove from heat.
- Carefully remove 16 leaves from the head of cabbage and put leaves in the water and let set until wilted.
- Remove a leaf from the water with tongs, take a good sized tablespoon of the hamburger-rice mixture into the leaf and wrap leaf around the burger mixture. May need to secure with a toothpick to keep closed.
- Place in a greased 9x13 pan.
- Repeat with remaining leaves and burger mixture.
- When you have used all the mixture, pour tomato juice and water over top of cabbage rolls.
- Cover and bake for an hour at 325.
PIGS IN A BLANKET
Steps:
- In a pot of salted boiling water, cook the cabbage leave for about 2 minutes. Drain on paper towels and allow to cool.
- Heat oil in a large skillet and cook onions until tender. Stir in green pepper and garlic and cook for three minutes. Stir in crumbled ground round and cook until meat is browned. Add thyme and season to taste. Stir in 1 cup crushed tomatoes and simmer gently for 2 minutes. Stir in cooked white rice and toss to coat. In a small bowl, mix together 1 cup crushed tomatoes and chicken stock and spread out in bottom of baking dish.
- Preheat oven to 350 degrees. Lay each cabbage leaf out flat ad place about 3/4 cup of rice mixture in center of leaf. Fold in sides of leaf and roll up. Place seam side down in baking dish. Cover dish with foil and bake for 20-30 minutes. Serve each cabbage roll up with a little sauce and garnish with chopped parsley

Steps:
- Heat the oven to 400ºF. Grease a large baking sheet. Sift the dry ingredients (flour through salt) into a mixing bowl (or dump them in one at a time, whatever).
- Rub the butter pieces into the dry ingredients until mixture is crumbly. Stir in cheese until evenly distributed.
- Make a well in the dry ingredients and add the buttermilk. Stir well with a wooden spoon. Let the dough sit for 3 minutes.
- Sprinkle the dough with flour and stir once or twice then turn out onto a well floured counter.
- With floured hands, pat the dough into a 15 by 7 inch rectangle, trimming the sides if necessary to get a true rectangle. (Handle the dough as little as possible for tenderness, yeah right).
- Using a pizza cutter, slice the rectangle into thirds horizontally then slice each third into thirds vertically, this will give you 9 small rectangles. Slice each rectangle diagonally into two thin triangles.
- One at a time, roll up the sausages in the triangles. Place pointy side down on greased cookie sheet.
- Bake for 12 to 13 minutes, until golden brown. Cool on the sheet for 3 minutes then tranfer to a wire rack.

A DIFFERENT STUFFED CABBAGE RECIPE
People just can't get over how good these are. This is a recipe that I received from a friend some 20+ years ago. I think the neck bones give it the flavorful taste. You'll definitely make again.

Steps:
- mix hamburger, salt, pepper, garlic, onions& rice.
- set aside.
- In huge pot, in boiling water, separate cabbage leaves.
- Once all possible leaves are separated, shred remaining cabbage head left and set aside.
- To roll the cabbage, take a leaf, you will see a vein in the leaf, lance that down flat for a better roll; put about a tbls.
- (depending on leaf size) of meat mixture in middle of leaf, roll up and tuck ends in with your fingers.
- In a huge roasting pan or pot if cooking on stove top (I use an 18 qt electric roaster) put a layer of shredded cabbage in bottom of pan (excess you did not use as leaves), next put a layer of sauerkraut, next put a layer of cabbage rolls, next put a 3-4 next bones on top of cabbage rolls, put another layer of sauerkraut cover with tomato juice.
- Continue above layering until all ingredients used up.
- I always double this recipe so I can give some away to family members and also have some leftovers to freeze.
- Cover and cook on medium heat until it boils, then put on low heat for 2 hours.
- That's the stove top method, I've never done that I've always baked it in the oven or used my electric roaster and cooked it at 300 for 3-4 hours.

- Place half of a cheese slice on each tortilla; top with 1 tablespoon salsa and 1 hot dog.

- Bake at 400 degrees for 5-7 minutes.

Kids love this one. My mom made it for me as did her mom. If making for a small child, cut the hot dogs into fourths length wise. The cheese is always optional.

- Preheat oven to 350 degrees F (175 degrees C).
- Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.
