Steps:

  • 1. Use a meat grinder or the coarse side of a box grater to grate the cheese; for a grinder, use the cutter with large holes. Put the ground or grated cheese in a mixing bowl and add half the juice from the canned pimentos. Dice the pimentos and add them. Add the chopped scallions.
  • 2. Combine the mayonnaise, lemon juice, and garlic. Add this to the cheese mixture. Add the Worcestershire, Tabasco, and black pepper and blend well; taste and adjust the seasoning.
  • 3. Serve at room temperature as a spread for crisp crackers and raw vegetables or use as a sandwich spread. (Pimento cheese can be tightly sealed and kept for several days in the refrigerator.).
  • Notes: I learned to make pimento cheese from a southern friend's mom. She doesn't use Worcestershire or garlic but I think they sound like great additions. I think I'll add this to next weekend's football food! I made it a day ahead of time and I think it tastes even better with a little time to rest before serving.

ODIE'S PIMENTO CHEESE SPREAD

When I was growing up, we used to visit my Grandparents, Odie and Grandpa, every summer in Bristol, VA. She made this wonderful pimento cheese spread. In those days before food processors, she used a meat grinder. Which is how I'm posting this recipe. I process this the same way using my Kitchenaid w/ attachments or sometimes I just give the cheese and pimentos a few zaps in the processor. This makes lovely tea sandwiches using whole wheat or white bread with the crusts removed and cut in quarters. This also freezes well.

Steps:

  • Chop 1 pound sharp cheddar cheese in very small pieces.
  • Add 1 (4 ounce) jar of pimentos.
  • Chop all in meat grinder.
  • Pour dressing over cheese, mix well, and refrigerate for a few hours.
  • To make dressing:.
  • Lightly beat the egg.
  • Mix egg, milk, sugar, vinegar, salt, flour, and pepper in a saucepan.
  • Cook on low, stirring with a whisk until well blended and thickened.
  • Note that the online editor insists on spelling it pimientos in the ingredient list which is why I typed "pimentos" in parenthesis above.

PIMENTO CHEESE SPREAD II - REVIEW BY HAPPYSCHMOOPIES
This is a very basic pimento cheese. I did like the crunch you get from the pecans, however, I did think it was bland for my taste. I added some cayenne pepper to taste and it greatly improved the flavor. It was more for flavor than the spicy heat. Definitely grate your own cheese. Pre-grated cheese may be a nice shortcut, but, it won't blend or taste as good if you use it.
