GRAPEFRUIT DAIQUIRI
Steps:
- Supreme 4 grapefruits (cut away the peels and pith, then cut the segments free from the membranes) and freeze the segments until solid, 8 hours or up to overnight.
- Juice the remaining 6 grapefruits using an electric citrus juicer. Keep pushing until the grapefruit pulp is out, creating a cup. Reserve the "cups" to serve in. (Freeze any extras for another use.)
- Combine the grapefruit juice, rum, lime juice and agave syrup in a large cocktail shaker filled with ice (see Cook's Note). Fit the reserved emptied grapefruit halves into large coupe glasses. Strain the cocktail into the grapefruit halves. Sprinkle in the grapefruit ice and garnish with mint leaves.
CLASSIC DAIQUIRI
Steps:
- In cocktail shaker filled with ice, combine rum, lime juice, and simple syrup. Shake vigorously, then strain into cocktail glass.
PINK DAIQUIRIS
I spread sugar on a plate, rub the rims of the glasses with lime, then dip in sugar before filling the glasses. It's really pretty.

- Combine the sugar with 1 cup water in a small saucepan, and heat until the sugar dissolves completely. Set aside to cool or refrigerate for up to 2 weeks.
- When ready to make the cocktails, combine the lime juice, 1 cup of the sugar syrup, and the rum in a pitcher. Fill 6 cocktail glasses with ice and pour the mixture over the ice. Garnish each cocktail with a slice of lime and serve ice cold.

A delicious guilty pleasure on a summer's day, especially with a cocktail umbrella.
