- Place 4 pieces of dough into a preheated, greased waffle iron.
- Spread one tablespoon of marinara, ¼ cup (25 grams) of mozzarella, and 3 slices of pepperoni on each piece of dough.
- Top with the 4 remaining pieces of dough and seal.
- Cook for 3-5 minutes, until golden brown, then serve.

- Special equipment: a waffle maker
- Preheat a waffle maker to a high heat according to the manufacturer's instructions.
- To make 1 pizza, stretch or roll out one-quarter of the pizza dough to a size slightly smaller than the waffle maker. Spray the waffle maker with the olive oil spray and place the dough on the surface. Close the lid and cook until the dough is nicely browned, 2 1/2 to 3 minutes, depending on your machine.
- Open the lid and spread a thin layer of marinara sauce across the pizza. Season with red pepper flakes and oregano. Sprinkle over a layer of mozzarella, sprinkle on some ham and pineapple chunks and top with roasted vegetables. Sprinkle over a second layer of mozzarella. Close the lid and cook just until the cheese melts, 1 to 2 minutes. Remove and eat. Careful, it will be hot!
- Repeat with the remaining ingredients.

- Stir together the tomatoes, 1 tablespoon olive oil, the salt, basil and garlic. Let sit at room temperature to give the flavors time to meld, about 1 hour.
- Preheat a waffle iron to medium-high. Lightly dust a clean work surface with flour and roll out half of the pizza dough into a 6-inch round (or to the maximum size your waffle iron can fit). Brush one side with olive oil and place oiled-side down on the waffle iron, then brush the other side with oil. Close the iron (don't push down) and cook until golden and cooked through, 4 to 6 minutes. Repeat with the remaining dough.
- Meanwhile, heat the tomato sauce in a microwave until hot. Spread each pizza with half of the sauce and half of the mozzarella. Place one pizza back on the waffle iron and hold the top of the iron just over the cheese until melted, 1 to 2 minutes. Remove and garnish with basil leaves, drizzle with olive oil and sprinkle with Parmesan. Repeat with the second pizza.
- Cut the pizzas into slices with a large knife or pizza cutter and serve.

- Whisk together first four ingredients in a large bowl. Combine egg yolks and buttermilk in a separate small bowl. Beat egg whites and cream of tartar at high speed in another bowl with an electric mixer until stiff peaks form.
