CREAMY GREEK SALAD DRESSING
Greek salads are usually only dressed with olive oil and maybe lemon juice or red-wine vinegar. But this dressing is made of 'Greek' ingredients so, it's my Greek Dressing.

Steps:
- In a blender or food processor, whirl all the ingredients except the buttermilk for one minute.
- With the blender running, slowly pour in the buttermilk and blend until thick and creamy (turn off the blender as soon as the dressing thickens or it may curdle).
- Chill at least 1 hour so the flavours meld.
- Refrigerate, tightly covered.
- This makes nearly 2 cups of dressing and stays fresh for 3-4 days.
- If the dressing separates, just give it a whizz in the blender again.

- Cook pasta as directed on box. Meanwhile, in large bowl, stir together seasoning mix (from salad box), oil, tahini, lemon juice and water.
- Drain pasta; rinse with cold water. Shake to drain well.
- Add drained pasta, tomatoes, cucumber, arugula and chick peas to tahini dressing mixture. Measure out and reserve 2 tablespoons feta cheese. Add remaining feta cheese to pasta; toss to combine. Sprinkle with reserved feta cheese. Serve immediately, or cover and refrigerate until ready to serve.

PIZZALINNI GREEK SALAD DRESSING
A Recipezaar adoptee. I've made a few changes in the forms of mustard, egg, oil, and oregano. I also decreased the amount of garlic to three cloves from the original 6. Go for the larger if you're a garlic fanatic.

- In a food processor or blender, mix mustard, salt, egg, and vinegar.
- Add oil very slowly, beating constantly.
- Add lemon juice.
- Pulse in minced garlic, oregano, worcestershire sauce, and pepper.

ABSOLUTELY FABULOUS GREEK/HOUSE DRESSING
This is the 'secret' Greek dressing recipe from the pizzeria that I work at. The recipe makes almost a gallon but can be scaled down easily. It can be used for picnics and travels very well, since it doesn't need to be refrigerated. - To make dressing, place the garlic, vinegar, salt, black pepper and cayenne in a blender or food processor fitted with a metal blade. Whirl until blended.
- Continuing to whirl, gradually add the oil, drop by drop at first, then in a thinly steady stream.
- The dressing will thicken.
- Continuing to whirl, add the anchovies or anchovy paste. Taste and add more salt, if needed.

EASIEST GREEK SALAD DRESSING
Easy and delicious dressing. Salad-haters tell me that they will eat a whole bucket of salad as long as it has this dressing on it. I have also brushed this dressing onto homemade pizza dough (in lieu of tomato sauce) when I make pizza at home. Note: If you do not have any red wine vinegar you can substitute a tablespoon of red wine (any kind will do) with a splash of regular vinegar. (Not really a new idea; just an easy substitution!)
