Steps:
- Cook penne rigate as package directs; drain.
- Combine flour and basil in paper or plastic bag. Add chicken; shake to coat evenly.
- In large skillet, over medium-high heat, brown chicken in oil. Remove chicken from skillet; drain.
- In same skillet add pasta sauce. Bring to a boil. Return chicken to skillet. Reduce heat.
- Cover; simmer 15 minutes or until chicken is fully cooked. Serve with hot penne.

This recipe was handed down by my grandmother. This is a delicious, very inexpensive meal that can feed a large family on a budget. I buy whole cut up chicken. This cuts out the prep time by about 15 minutes.

Steps:
- Take off the skin from the chicken, discard and place chicken in a plastic bowl.
- Quarter the potatoes and also place in bowl with chicken. Add the chicken bullion and mix until all pieces are covered with bullion.
- In a large cooking pot, add the oil and heat. When oil is heated, add the chopped onions, tomatoes and bell pepper. Saute for about 1 minutes or until translucent.
- Add the chicken and potatoes to the pot and brown the chicken. About 7 to 10 minutes.
- Add the tomato sauce and add enough water to cover the chicken. Add the cilantro. Add salt IF NEEDED.
- Cover and cook for about 30 minute or until potatoes are cooked.
- Serve with white rice.

- In a large pot bring salted water to a boil. Add penne pasta and cook until al dente, drain and set aside.
- Using a large skillet and over medium-high heat melt butter. Add onion and garlic to melted butter and cook for 2 minutes. Stirring occasionally, add chicken and continue cooking until golden brown, approximately 5-6 minutes.
- Reduce heat to medium-low, begin adding drained and chopped artichoke hearts, chopped tomato, feta cheese, fresh parsley, lemon juice, dried oregano, and drained penne pasta to the chicken. Cook until heated through, approximately 2-3 minutes. Season with salt and ground black pepper to taste, serve warm.

PASTA ALLA GENOVESE
To many Neapolitans, the beef sauce La Genovese is at the heart of the city's cooking. Yet it's little more than onions (lots of them) and beef, simmered until both fall apart. Boiling the onions before cooking is a variation on traditional technique and could be considered a shortcut; it does save time, though not a whole lot of it. It's easy enough, and more traditional, to slice the onions raw and increase cooking time accordingly.

- Bring a large pot of water to a boil. Place the onions in the boiling water, and cook, covered, 15 minutes. Drain the onions, and let cool a bit, then slice very thinly.
- Heat half the oil in a large heavy pot over medium-high heat; stir in the carrots, celery and bacon, and cook for 4 minutes. Add the beef, then cover with the onions. Pour the remaining oil over the onions, then sprinkle with 1 1/2 teaspoons salt and 3/4 teaspoon pepper. Cover, bring to a simmer and cook gently until the beef is tender, about 2 hours; the onions will release a good deal of liquid.
- Uncover the pot and bring to a boil. Cook, stirring more frequently as the liquid reduces and lowering the heat as necessary to prevent scorching, until the meat has fallen apart and the sauce is creamy, about 45 minutes. Stir in the wine and taste, adding more wine if desired. Reduce the heat to low, and continue to cook, stirring frequently, until the sauce is glossy and quite thick, about 15 minutes more.
- Cook the pasta in a large pot of boiling salted water until al dente, then drain and toss with the sauce. Stir in Parmesan to taste, then serve.

- Cook pasta according to package directions, or 11-12 minutes until al denté.
- While the pasta is cooking, heat oil in a large skillet over medium-high heat; add chicken and sauté 1-2 minutes; then add shallots, garlic, salt, and cayenne pepper flakes, and sauté another 1-2 minutes; then add mushrooms and sauté another 3 minutes until chicken is nearly done; sprinkle flour evenly over chicken mixture and stir it in; add wine, broth, and spinach; cook and stir 2 minutes until spinach is wilted, sauce thickens slightly, and chicken is cooked through.
- Drain pasta and add it to chicken mixture in skillet; toss well and heat through; transfer to serving platter, top with cheese, and serve immediately.

This is a pasta recipe I've been cooking forever. I've changed it slightly over the years, but it's basically the same sauce I've made since I was a teenager.

- Sauté onions in olive oil until translucent.
- Add garlic and cook for one more minute.
- Add tomato, tomato sauce, tomato juice, black pepper, salt, basil, and parsley.
- Once sauce boils reduce to simmer and add grilled chicken.
- Simmer until pasta is cooked.
- Cook penne pasta in boiling, salted water.
- Strain pasta and add to sauce.
- Serve topped with Parmesan cheese.
