BAKED PORK CHOPS IN ONION-SOUR CREAM GRAVY
I make this recipe on cold nights...the gravy is SOOOO good!! I serve it with whipped potatoes and I practically have my family licking the plate.

Steps:
- Preheat oven to 350 degrees.
- Brown chops and move to a 9x13 baking dish.
- Leave 1 tablespoon drippings in pan. Add to pan the flour and onion soup mix. Blend in water. Pour over chops in baking dish.
- Cover with foil and bake for 30 minutes.
- Uncover and continue to bake for another 30 minutes.
- Remove pan from oven.
- Remove chops from pan to serving dish and then add in the sour cream to the liquid in the pan to make gravy.
- Serve immediately.
- Serve with potatoes or noodles.

SUNDAY DINNER PORK ROAST WITH MUSHROOM GRAVY
Steps:
- Preheat the oven to 450 degrees F.
- Pierce the roast all over with the tip of a paring knife and stuff one clove of garlic into each hole, followed by a few drops of hot sauce. Sprinkle on all sides with Essence and garlic powder and rub into the meat. Heat the oil in a Dutch oven over medium-high heat and brown the roast evenly on all sides, about 10 to 15 minutes. Add the chopped onion, celery, bell pepper, and enough water to come 1-inch up the sides of the pan. Add the teriyaki sauce, Worcestershire sauce, and stir to combine and loosen any browned bits on the bottom of the pan. Cover and bake for 45 minutes.
- Reduce the oven temperature to 350 degrees F and add a more water as necessary to come 1-inch up the sides of the pan. Continue to cook until very tender, about 3 1/2 hours total cooking time.
- Meanwhile, to make the gravy, melt 4 tablespoons of the butter in a medium saucepan. Whisk in the flour and cook, stirring constantly, over medium heat, until milk chocolate-colored roux is formed, about 15 minutes. Add the onion, bell pepper, celery, garlic, and the white part of the green onions, and cook until the vegetables are soft but not browned, about 5 minutes. Whisk in the beef stock and heavy cream and cook until thickened, 10 to 15 minutes.
- While the sauce is simmering, melt the remaining 2 tablespoons of butter in a medium skillet over medium-high heat. Add the mushrooms and cook, stirring, until tender and golden brown around the edges, about 5 minutes. Add the mushrooms and teriyaki sauce to the gravy and simmer until flavors come together, about 3 minutes. Remove from the heat and cover to keep warm.
- Remove the roast from the oven and transfer to a platter. Cover loosely with foil to keep warm. Strain the pan juices through a fine mesh strainer into the gravy and simmer until heated through and thickened, about 5 minutes. Season with salt and pepper, to taste, and serve over the carved roast.
- Combine all ingredients thoroughly and store in an airtight jar or container.

- whisk in milk slowly to prevent lumps.

- TIPS- If your sauce gets to thick add more milk. If it is to runny, add more flour. You can serve this sauce over potatoes, biscuits, chicken fried steak, etc.

ROASTED LOIN OF PORK WITH PAN GRAVY

- Preheat oven to 300 degrees F (150 degrees C).
- Melt the butter in a skillet over medium heat, and stir in the black pepper, cayenne pepper, thyme, oregano, dry mustard powder, and garlic. Cook and stir until the garlic is fragrant, about 1 minute. Remove from heat.
- With a sharp knife, make several small slits in the pork roast. Place the roast into a roasting pan, and spread the spice mixture all over the roast and in the incisions. Surround the roast with celery, carrots, and onion, and season to taste with salt and black pepper.
- Roast in the preheated oven until the pork roast is browned and an instant-read meat thermometer inserted into the center of the roast reads at least 150 degrees F (65 degrees C), about 2 hours. About 15 minutes before the end of cooking, turn the oven temperature up to 425 to help brown the roast.
- Remove pork roast from oven, and allow to stand for about 10 minutes before slicing. Check temperature again; roast temperature should be at least 160 degrees F (75 degrees C) before serving.
- While roast is resting, place the roasting pan containing vegetables and pan drippings over a stove burner set to medium heat. Whisk in the flour, and simmer the drippings and flour for about 3 minutes to remove raw taste from flour. Whisk in the pork stock, a little at a time, until the gravy is thickened. Strain the gravy, and serve with the roast.

- Preheat oven to 325 degrees F (165 degrees C).
- In a shallow dish, stir together egg, water, rosemary, black pepper, and garlic powder.

- In a Dutch oven, brown roast in oil on all sides. In a small bowl, combine wine, brown sugar, soy sauce, ginger, garlic and bouillon; pour over roast., Bring to a boil. PORK IN SOUR CREAM GRAVY
This recipe has always been a family favorite in my house. It takes a while to cook about 3 hours start to finish, but its worth the wait. The meat will melt in your mouth. This recipe is best served with mashed potatoes.

- Rub the meat with the crushed garlic, olive oil, salt & pepper.
- Place the meat in a plastic bag and let it marinate in the mixture for at least 30 minutes.
- Heat olive oil in a large pot (enough to cover the bottom of the pot).
- Add 1 onion cut in half and the pork pieces Brown the meat on all sides.
- Once the meat is browned add enough water to the pot to just cover the meat.
- Lower the heat to medium and let the meat boil until the water almost completely evaporates (not enough for the meat to start burning).
- Add enough water again to cover the meat and add a pinch of the Vegeta soup seasoning (or all purpose seasoning).
- Repeat the process of adding water and letting it evaporate until the meat is tender and falls apart easily.
- When the meat is tender enough allow the water to again almost completely evaporate.
- Remove the meat from the pot and the larger pieces of the remaining onion. Discard the onion.
- Scrape the meat pieces and drippings inside pot so that they are all in the water that remains.
- Add about a cup of water to the pot (this is the amount of gravy that you want to end up with), stir, and allow to come to a boil.
- In a separate bowl, combine approximately 1/2 cup of water with the sour cream and flour.
- Wisk/mix until the mixture is smooth and without lumps.
- Slowly add this mixture to the pot and let it come to a boil.
- Reduce the heat and simmer for a few minutes.
- If the consistency of the gravy is too thin add a little more of flour/water/sour cream mixture. If it is too thick add more water.
- Add the bay leaf.
- Bring the mixture to a boil.
- Remove the pot from heat.
- Return the cooked meat to the gravy.
- Let it stand for about 15 minutes in the gravy before serving.
KONRAD'S PORK SHOULDER GRAVY

- In a large bowl, combine the caraway seeds, garlic powder, smoked paprika and salt. Remove and reserve a third of the spice mix in a separate small bowl. Score the pork shoulder on the cap side with a sharp knife, making 8 shallow cross-cuts. Add the pork shoulder to the large bowl with the spice mix, then rub the entire pork shoulder with the spice mix. Cover with the mustard and let sit for 20 minutes.
- In a soup pot, heat the olive oil and vegetable oil on high heat, then add the pork shoulder on the scored-skin side. Sear all sides of the meat to lock in the deep flavor and juices. Add the garlic and thyme. Add the chicken broth, bay leaves and pickle juice and let it simmer, covered, until the meat falls off the bone, 1 1/2 hours. Shred the meat to bite-size pieces in the pot. Add more of the reserved spice mix to taste. Combine 1 tablespoon cornstarch with 1 cup water in a small bowl, adding a bit more cornstarch and whisking together well until you have a "buttermilk" consistency. Pour the cornstarch slurry into the gravy slowly, a little bit at a time, stirring to the desired thickness.
HERBED PORK ROAST AND CREAMY MUSHROOM GRAVY

- Preheat oven to 325 degrees F.
- Mix together rosemary, parsley, thyme and garlic. Cut small slits over surface of roast and insert herb mixture into slits. Place in a roasting pan. Roast until the internal temperature is 165 degrees F. Remove roast from pan and let stand 10 minutes. Stir soup into pan drippings in roasting pan and heat over a medium flame. Gradually stir in skim milk. Continue to stir until mixture boils. Slice pork and serve with gravy.
RICH SOUR CREAM GRAVY
I found this going through some of my mothers old recipes. I know she made this often and it is delicious.

- Pour drippings from the roast poultry into a 2-cup glass container. Skim off the fat.
- Return 1/4 cup of fat to roasting pan.Blend 2 tablespoons of flour into the fat in the pan.
- Cook and stir 1 to 2 minutes. Loosening bits crusty bits in pan.
- Add Worrcestershire sauce, basil, onion, salt and pepper to juices in the glass measuring cup.
- Add enough water to make 2 cups.
- Stir into mixture into roasting pan. Cook and stir until thickened and bubbly
- Stir the remaining 2 tablespoons of flour into the sour cream.
- Gradually blend 1/2 cup of hot mixture into the sour cream. Stir the sour cream mixtujre into the gravy.
- Cook and stir until bubbly about 1 minute more.

ROASTED PORK SHOULDER WITH PAN GRAVY

- Preheat the oven to 300 degrees F.
- Sprinkle the pork really well with salt, pepper and paprika. Tie the pork with kitchen twine (or you can purchase it tied from the butcher). Set a roasting rack inside of a roasting pan and place the pork on the rack. Roast for 3 hours, basting periodically.
- After 3 hours remove the pork from the oven and gently lift the rack off the pan. Scatter the carrots, potatoes, onions and garlic in an even layer and season with salt and pepper. Place the rack and pork back on top of the vegetables and continue to roast until the vegetables are caramelized and the pork is tender and yielding, another 2 to 3 hours.
- Remove from the oven and allow the pork to rest for 15 minutes while you make the pan gravy.
- Remove the vegetables to your serving platter and place the pan over the stove-top burner on medium heat. Add the flour and stir to combine with the fat. Gradually stir in the stock, being sure to scrape the bottom of the pan for brown bits. Bring to a simmer so the gravy can fully thicken, and then stir in the parsley. Serve the pork with lots of vegetables and the pan gravy on and around.
