- Bake half a 28-ounce bag frozen potato puffs in a 2-quart baking dish at 425˚ until crisp, 30 minutes. Meanwhile, cook 1 tablespoon each butter and flour in a small saucepan over medium heat, whisking, until melted. Whisk in 1 1/4 cups milk, 1 small grated garlic clove, 1/2 teaspoon chopped thyme, 1/4 teaspoon kosher salt and a pinch of cayenne. Simmer until thickened, 10 minutes. Off the heat, stir in 1/2 cup grated gruyère. Pour over the potato puffs. Broil until browned, 3 to 4 minutes. Top with chopped chives.

- Preheat the oven to 400 degrees F.
- Add the cream and milk to a large saucepan over medium-low heat and bring to a gentle simmer. Add the nutmeg, a big pinch of salt and some pepper. Meanwhile, slice the potatoes on a mandoline to 1/8-inch thick. Place the potatoes in the warm cream mixture and simmer gently until the potatoes are two-thirds of the way cooked and the cream has thickened, about 15 minutes.
- Place a 9-by-12-inch flameproof gratin dish on the stove over low heat. Brush the bottom and the sides with the melted butter. Spread the garlic around the bottom of the dish. Cook just long enough to toast the garlic in the butter, 3 to 4 minutes. Add a layer of the potato mixture. Combine the Gruyere and Parmesan in a bowl, then sprinkle a third of the cheese over the potatoes. Repeat the layering 2 more times, finishing with the remaining cheese. Pick the thyme leaves and sprinkle over the top, mixing with last layer of cheese. Place the gratin dish on a rimmed baking sheet and bake until bubbly and golden, 45 to 50 minutes (see Cook's Note).

- Preheat oven to 400ºF.
- Coat a 10-inch gratin dish or glass pie plate with 3 sprays of the vegetable oil.
- Layer 1/3 of the potatoes over the bottom of the prepared gratin dish, overlapping the slices in a spiral pattern.
- Over the potatoes, sprinkle 1 tablespoon of the flour and arrange the onion rings.
- Dust with the cayenne and 1/2 teaspoon of the paprika.
- Layer another third of the potatoes, adding the remaining tablespoon of flour, the black pepper, and 1 tablespoon of the parmesan.
- Scatter the zucchini, dusting with the nutmeg and Spike seasoning.
- Top with a spiral layer of the remaining potatoes.
- Pour the evaporated milk over the gratin and add the remaining paprika and parmesan.
- Cover with foil and bake for 45 minutes.
- Remove the foil, lower to 350ºF, and bake for about 15 minutes more, until the top is golden brown.
- Remove the gratin from the oven and allow it to cool for 10 minutes.
- Garnish with the chopped parsley.
CRISPY GARLIC LEMON POTATOES
A delicious low fat potato dish which I found in the November 2005 issue of the 'Australian Good Taste' magazine, as an accompaniment to Recipe #145704. I have posted both recipes for the post-ZWT Healthy for the Holidays Challenge.

- Preheat the oven to 220°C.
- Cook the potatoes in a large pan of salted boiling water for 6-7 minutes or until just tender, and drain well.

Steps:
- Bring a large pot of water to a boil over high heat and maintain at a boil.
- Put the olive oil and garlic in a saute pan and cook over medium heat just until the garlic begins to brown.
- Remove the saute pan from the heat and pour in the wine.
- Return it to the heat.
- Cook for another 1 to 2 minutes, until the wine has been reduced by 1/2.
- Stir in the lemon juice and tomato.
- Remove the pan from the heat.
- Place the pasta in the boiling water and cook to desired doneness, 30 seconds to 1 minute.
- Drain the pasta and put it into a warm serving bowl.
- Add the basil, parmesan, and black pepper, along with the tomato mixture.
- Toss and serve immediately.

We would have loved to take some credit for Danielle's success but she actually had it all before coming to Ottolenghi. Danielle's big personality and warmth make everybody fall in love with her in an instant, She has a natural gift for presentation and, like herself, her food constantly smiles. This d sh is simple but effective, due to the way the potatoes are arranged in the baking dish. You can prepare everything a day in advance and have it ready in the fridge to just pop in the oven, The sage can be replaced with thyme, or you could use both. Make sure you choose orange-fleshed sweet potatoes (as opposed to the paler variety).

- Preheat the oven to 200C./Gas Mark 6, Wash the sweet potatoes. (do not peel them) and cut them into discs 5mm thick. A mandolin is best for this job but you could use a sharp knife.
- In a bowl, mix together the sweet potatoes, sage, garlic, salt and pepper. Arrange the slices of sweet potato in a deep, medium-sized ovenproof dish by taking tight packs of them and standing them up next to each other. They should fit together quite tightly so you get parallel lines of sweet potato slices (skins showing) along the length or width of the dish. Throw any remaining bits of garlic or sage from the bowl over the potatoes. Cover the dish with foil, place in the oven and roast for 45 minutes. Remove the foil and pour the cream evenly over the potatoes, Roast, uncovered, for a further 25 minutes. The cream should have thickened by now. Stick a sharp knife in different places in the dish to make sure the potatoes are cooked. They should be totally soft.
- Serve immediately, garnished with sage, or leave to cool down. In any case, bringing the potatoes to the table in the baking dish, after scraping the outside clean. will make a strong impact.

POTATOES GRATIN
I'm not a big scalloped potato fan, because often I find that they are bland or have a nasty texture. These are the exception! If you have a mandoline or a food processer, use it to slice the potatoes- you need them to be really thin.

- Preheat oven to 375.
- Combine all ingredients in a large bowl, and mix until all of the potatoes are coated.
- Butter a shallow baking dish, and add potato mixture, flattening top of potatoes.
- Bake for 40 minutes, or until the potatoes are tender and the edges bubble.
- Let stand for 10 minutes, then serve.
- Notes: I have made this ahead of time, and put the mix in a zip top bag in the fridge until I was ready to bake.
- For a browned top, dot with small chunks of butter before baking.

POTATO GRATIN
In this classic gratin, thinly sliced potatoes soak up all the goodness of a milk-and-cream mixture that has been spiked with nutmeg. A sprinkling of grated Gruyere cheese on top becomes gooey in the oven. Using a mandoline creates thin slices, which helps the gratin cook more evenly.

- Preheat oven to 375 degrees. Peel potatoes, and place in a bowl of water to prevent discoloring. Rub inside of a 9-by-12-inch oval baking dish with cut sides of garlic. Heat cream, milk, nutmeg, and 1 1/2 teaspoons salt in a medium saucepan over medium heat until bubbles form around edge. Season with pepper. Remove from heat.
- Meanwhile, slice potatoes 1/8 inch thick; transfer to a bowl. Pour warm cream mixture over top. Mix well, using your hands to separate and coat potatoes, and transfer to prepared dish. Gently push potatoes down, and pour cream mixture from bowl over top. Sprinkle with Gruyere. Bake (with a baking sheet placed on the rack below to catch drips) until potatoes are fork tender and top is bubbling and brown, about 1 hour and 15 minutes.
