- Place 2 pieces of white bread in the toaster on a light setting. Heat skillet over medium heat with 2 tablespoons butter. While the bread is toasting, in a small bowl, using a fork mash the ripe banana until it reaches a smooth consistency. Using a knife, take both pieces of the toasted bread and spread 2 tablespoons of creamy peanut butter, topping 1 side with the mashed banana. Place 1 slice of bread on top of the other forming a sandwich. Place sandwich in hot skillet browning each side, flipping with a spatula, about 2 minutes per side. Take out of skillet, slice on a diagonal and serve on a plate.
DEEP-FRIED BANANA WITH CHOCOLATE & PEANUT BUTTER RECIPE - (4.8/5)

- Line a baking sheet with parchment paper. Dip a popsicle stick into the melted chocolate. You want to have about a half-inch of chocolate on the tip. Stick the chocolate-covered end into the bottom of a banana piece, about halfway in. Place the banana on the baking sheet and repeat with the remaining pieces. When complete, place the baking sheet in the freezer for about 15 minutes. Keep the remaining chocolate warm. Place 1 cup of the chopped peanuts on a shallow plate. Remove the bananas from the freezer, and one at a time, use a spoon to cover each piece with chocolate. Remove any excess on the edge of the spoon. Dip and roll each banana into 1 cup of the peanuts and then place them back on the baking sheet. Reserve the leftover chocolate. Place the baking sheet into the freezer for 30 minutes. Heat deep fryer to 375°F. About 20 minutes into the banana freezing time, prepare the batter by combining the flour, sugar, baking powder, and cinnamon in a medium-size bowl. In a large bowl, whisk together the egg, milk, and peanut butter. Whisk the dry ingredients into the wet ingredients until smooth. Fold in the remaining chopped peanuts. Remove the bananas from freezer. One at a time, dip each banana into the batter being sure to cover the entire banana up to the popsicle stick. Let the excess batter drip off. Carefully submerge the banana into the hot oil and hold onto the end of the popsicle stick for about 6-8 seconds. Release and let it continue to fry, turning it with a pair of tongs until evenly dark golden brown. Remove the banana from the oil and drain it on paper towels. Repeat with the remaining bananas. Serve immediately with the leftover chocolate for dipping.

A neighbor introduced me to this southern sweet and sour banana dish. It was quite a hit. I made a couple of improvements (to my tastebuds) and thought I should share it.

- Spread peanut butter onto the cut side of the banana halves, and seal the halves back together. Slice into coins, and set aside.
- In a saucepan over low heat, whisk together the egg yolks and 1/2 cup of the sugar. Stir in the vinegar and butter. Cook, whisking constantly until clear. Whisk in remaining sugar if you like.
- Place the bananas into a serving bowl, and pour the sauce over them. This dish may be served hot or cold.

- Cook potatoes according to directions on package. Place in refrigerator to cool while preparing the remaining ingredients.
- Place peanut butter, chocolate chips, brown sugar and vanilla extract in a large saucepan. Heat over medium burner, stirring gently, until ingredients have melted and you have a smooth batter. Fold in cooled mashed potatoes until just blended.
- Place in refrigerator and chill dough for 30 minutes. Dough should be firm but pliable at this point. Remove chilled dough and preheat oven to 375 degrees. Roll dough into small balls and place on greased cookie sheets. Press cookies flat with a fork. Bake at 375 for 8-10 minutes until golden brown. Cool for about 5 minutes before removing from cookie sheet.

5-Ingredient Fix Contest Entry. My inspiration for this recipe came from the "King". It's no secret that one of Elvis Pressely's favorite snacks was a fried peanut butter and banana sandwhich encrusted in potato chips. So I went for the banana encrusted in potato and peanut butter then deep fried it of coarse. I was surprised how well the flavors worked and the banana was just perfect. A great easy snack or what a way to dress up a banana split.

- Warm potatoes 30 seconds in microwave.
- With a spoon make sure potatoes are mashed really good getting all lumps out.
- Add peanut butter and combine with powdered sugar, blend well.
- Place bananas in batter make sure bananas well coated on all sides.
- Drop bananas in hot oil cook for 45-60 seconds.
- Serve with powdered sugar sprinkled on top.

- In a sauce pan over medium heat, combine Cream Cheese, Peanut Butter, Soy Sauce and Sriracha. Stir until combined and cream cheese has melted, about 5 minutes. If sauce is too thick ( this will depend on the peanut butter) add between 1-4 Tablespoons of water. The sauce should be a thick, but liquid, consistency.
- Meanwhile, prepare Simply Potatoes Diced Potatoes with Onion according to package directions.
- Combine sauce and simply potatoes and let cook together 2 minutes more, until the flavors meld together.
- Enjoy! Green onions make a nice garnish.

- In a frying pan, melt 3 tablespoons of the butter. Make sure butter does not burn. In a small bowl mix together the peanut butter, honey, and cinnamon. Slice the bananas into 1/4-inch thick slices. Spread the peanut butter mixture on 4 slices of bread and cover with banana slices. Top with the remaining 4 slices of bread. Spread the remaining butter on both sides of the sandwiches. Grill the sandwiches in the frying pan until each side is golden brown.
- For topping, combine the sugar and cinnamon in shallow plate. Coat the grilled sandwiches with the mixture. Cut diagonally and serve hot.
