BEEF AND POTATO PIE
Beef and vegetables baked in a delicious pie. Great for dinner and excellent warmed-up the next day as well. Other vegetables can be interchanged like celery, peas, etc. Two pounds ground beef can be substituted for sirloin.

Steps:
- Place a baking sheet on rack in the lower third of the oven. Preheat oven to 400 degrees F (200 degrees C).
- Heat oil and butter together in a large saucepan over medium heat; cook and stir onion until softened, about 10 minutes. Add beef; cook and stir until browned on all sides, about 5 minutes. Add garlic; cook and stir until fragrant, about 1 minute.
- Stir flour, pepper, and salt into beef mixture; cook and stir until beef is coated, 2 to 3 minutes. Add wine; bring to boil, reduce heat, and simmer, 3 to 5 minutes.
- Mix beef stock, potatoes, carrots, tomato paste, and Worcestershire sauce into beef mixture; bring to a boil. Reduce heat and simmer until vegetables are tender, 30 minutes to 1 hour. Remove from heat and cool.
- Line a 9x13-inch baking dish with 1 pie crust. Spoon beef and potato filling into crust; top with remaining pie crust, crimping the 2 crusts together around the edges using a fork or your fingers. Brush top crust with milk.
- Place baking dish on the baking sheet in the oven and cook until crust is golden brown, 40 to 45 minutes.

This is sheer comfort food. The recipe came from my Irish-German family and I really don't know if its either of those originally, or a combination of both. My Mom and Grandma both changed recipes a lot, using what they had on hand and what they liked.

- 1. Preheat oven to 425 degrees. Line a 10 inch pie plate with pastry. Place 1/4 of potato slices in pastry. If using ham sprinkle 1/4 of ham over potatoes. Mix garlic, salt, pepper, and parsley. Sprinkle 1/4 of this mixture on potatoes. Repeat layers until all these ingredients are used.
- 2. Top pie with top crust. Seal edges with a fork. Cut slits in top of crust to allow team to escape. Carefully pour cream or half and half through the slit into the pie filling. Brush top of pie with beaten egg yolk. You will not need it all. Bake for 1 hour. You may wish to cover edges of pie with foil to prevent over-browning. Let pie sit for 10 minutes before cutting.

- Preheat oven to 400°. In a Dutch oven, heat 1 tablespoon oil over medium heat. Add shiitake mushrooms and cook in batches until dark golden brown, 8-10 minutes; remove with a slotted spoon. Repeat with 1 Tbsp. oil and the portobello mushrooms., In same pan, heat 1 tablespoon oil over medium heat. Add onions; cook and stir 8-10 minutes or until tender. Add garlic and 1 teaspoon rosemary; cook 30 seconds longer. Stir in beer, 1 cup broth, bay leaves, vinegar, soy sauce and sauteed mushrooms., Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes. In a small bowl, mix cornstarch and remaining broth until smooth; stir into mushroom mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Remove and discard bay leaves; transfer mushroom mixture to 8 greased 8-oz. ramekins. Place on a rimmed baking sheet., Layer sweet potatoes in a circular pattern on top of each ramekin; brush with remaining oil and sprinkle with pepper, salt and additional rosemary. Bake, covered, until potatoes are tender, 20-25 minutes. Remove cover and bake until potatoes are lightly browned, 8-10 minutes. Let stand 5 minutes before serving.

- Combine flour, sugar and salt in a bowl; cut in the shortening and butter until crumbly. Add water and mix lightly with a fork. Shape dough into a ball; divide in half. On a lightly floured surface, roll out one half to fit a 9-in. pie plate. For filling, combine potatoes, onion, salt, pepper and parsley. Spoon into crust; dot with butter. CHEESY POTATO POT PIE
This is a great comfort food for vegetarians. You can make your own pie crust if you have the time. I got the general recipe from foodreference.com, but tweaked it quite a bit to suit our tastes. Feel free to use any kinds of vegetables or seasonings you prefer.

- Preheat the oven to 350 degrees F.
- Melt the butter in a deep, wide sautee pan over medium-low heat.
- Add the onions,garlic and vegetables, and cook, stirring occasionally, until the vegetables are tender, about 8 minutes.
- Stir in the potatoes and enough milk to almost cover the potatoes.
- Bring to a boil over high heat.
- Reduce the heat to medium and simmer, stirring occasionally, until the potatoes are tender, about 10 minutes.
- Partially mash the potatoes with a potato masher in the pan.
- Stir in the parmesan-romano cheese, thyme, mustard, salt, and pepper.
- Remove from the heat to cool slightly.
- Meanwhile, lay 1/2 cup Cheddar over the bottom of the prepared crust.
- Stir the egg yolks into the potato mixture.
- Beat the egg whites with clean dry beaters
- in a medium bowl until almost-stiff peaks form when the beaters are lifted.
- Gently fold the whites into the potato mixture, then scrape the filling over the Cheddar in the crust. Sprinkle the paprika and other 1/2 cup Cheddar over the filling.
- Bake until puffed and golden, about 20-30 minutes. Let cool before serving.

- Combine 2 3/4 cups flour and 1 teaspoon kosher salt in a large bowl. Cut lard into the flour mixture until it resembles coarse bread crumbs. Add ice water a tablespoon at a time, tossing to mix. Gather the dough into a ball, divide it in half, and wrap each piece in plastic wrap. Refrigerate the dough while you prepare the filling.
- Mix together 2 1/2 tablespoons flour, 1/2 teaspoon dried thyme, paprika, pepper, ginger, and allspice in a bowl. Dredge the steak pieces in the seasoned flour and set aside.

POTATO PIE
I thought I better post this so that I would know where it is every time I go to make it. I am tired of searching through umpteem books each time. It is my husband's favorite dish and if I have to be honest I really enjoy it as well. It's a supper dish found in both Monmouthshire and the Welsh counties, traditionally served with pickled beets or pickled red cabbage. We like it with crusty brown bread and pickled beets. It's delicious!

- Boil the potatoes in salted water until cooked.
- Preheat oven to 425*F.
- Drain the potatoes well, add the milk and butter and mash until smooth, then stir in the cheese and seasoning.
- Butter a 1 1/2 to 2 pint pie dish and sprinkle with the breadcrumbs, pressing them to the base and sides with the back of a spoon.
- Spoon the potato and cheese mixture into the dish and rough up the top with a fork.
- Brush with the melted butter.
- Bake for 20 to 30 minutes or until golden brown.
- Serve with pickled beets or red cabbage and thick slices of crusty brown bread (buttered of course!).

- Place flour in processor. Add butter; using on/off turns, blend until coarse meal forms. Add 3 tablespoons ice water and blend just until moist clumps form, adding more ice water by teaspoonfuls if dough is dry.
- Cook potatoes in large pot of boiling salted water until just barely tender (do not overcook; potatoes need to be firm enough to slice without falling apart), about 30 minutes.
- Preheat oven to 350°F. Line crust with foil; fill with dried beans or pie weights. Bake crust 20 minutes, remove foil and beans, and bake until crust is set, about 10 minutes.
- Sprinkle 1/2 cup cheese over bottom of crust. Whisk eggs, cream, milk, salt, pepper, and nutmeg in large bowl to blend. Add potato slices and toss gently to coat.
- Bake pie until custard is set and top is golden brown, about 50 minutes. Cut into wedges and serve hot.
