BRIE PUFF PASTRY
My husband was in the Air Force, so we've entertained guests all over the United States. I acquired this recipe while in California. It's one of my favorite special appetizers. -Sandra Twait, Tampa, Florida

Steps:
- Preheat oven to 400°. Cut Brie horizontally in half. Sprinkle bottom half with blue cheese; replace top., On a lightly floured surface, roll pastry into a 14-in. square. Trim corners to make a circle. Spoon jam onto center of pastry; sprinkle with almonds. Top with Brie., Lightly brush edges of pastry with beaten egg. Fold pastry over cheese, pinching edges to seal; trim excess pastry as desired., Transfer to an ungreased baking sheet, seam side down. Brush pastry with beaten egg. Bake until golden brown, 20-25 minutes., Immediately remove from pan to a serving plate; let stand 45 minutes before serving. Serve with crackers.

BAKED BRIE IN PUFF PASTRY
This wonderful, light puff pastry is filled with melted Brie cheese. Serve with crackers on the side.

Steps:
- Preheat oven to 350 degrees F (175 degree C). Lightly grease a 9 inch pie pan.
- Slice the wheel of Brie in half, horizontally, so that the halves are two, flatter wheels of Brie. Lay the puff pastry in the pie pan. Place half of the Brie (rind-side down) onto the pastry dough. Sprinkle almonds evenly over the top. Place the other half of the Brie (rind-side up) over the almonds. Bundle the pastry dough around the Brie.
- Bake for 15 to 20 minutes. Let cool for 5 minutes before serving.

PUFF PASTRY WRAPPED BRIE
Steps:
- 1. Heat oven to 400 degrees F. Beat egg and water in bowl.
- 2. Unfold pastry on lightly floured surface. Roll into 14" square. Place cheese in center. Fold pastry up over cheese to cover. Trim excess pastry and press to seal. Brush seam with egg mixture. Place seam-side down onto baking sheet. Brush with egg mixture.
- 3. Bake for 25 minutes or until the pastry is golden brown. Let stand for 20 minutes.
BAKED BRIE IN PUFF PASTRY WITH APRICOT OR RASPBERRY PRESERVES
This baked brie puff pastry is rich, creamy, and dessert-like. It always disappears. I'm always asked for the recipe. Raspberry preserves goes great in this as well. Bringing in 2012 I made this using Recipe #463563!

Steps:
- Preheat oven to 425.
- Lightly grease cookie sheet.
- Roll puff pastry out slightly.
- Place cheese wheel on top (leave rind on).
- Place preserves on top of cheese.
- Place almonds on top of preserves.
- Bundle Puff Pastry up and around the cheese.
- Bake for 20-25 minutes.
- Let cool for five minutes.
- Serve with your favorite crackers.
BAKED BRIE BITES
Flaky puff pastry meets creamy brie in these warm oozy throwback apps. An ice cube tray is the secret to stuffing them full of goodies like candied pecans and grapes.

Steps:
- Lightly flour a work surface and roll out both puff pastry sheets into 12-inch squares. Lay half of 1 sheet over a 12-compartment ice cube tray (the other half of the sheet will hang off the tray) and gently use the back of your fingers (or the handle of a wooden spoon) to press the pastry down into each compartment of the tray. Repeat with the remaining pastry sheet and a second ice cube tray.
- Fill each ice cube compartment with 1 piece of brie, 1 teaspoon pecans, 1 red grape half and a pinch of black pepper.
- Brush the top of the pastry that is hanging off the ice cube tray with egg and fold it over the compartments to cover the fillings. Trim the excess pastry around the edges of the tray, then press the dough together with your fingers to seal. Freeze the ice cube trays for 15 minutes.
- Position a rack in the center of the oven and preheat to 400 degrees F.
- Use your fingers to gently loosen the puff pastry from the ice cube trays then flip out onto a cutting board. Cut in between each brie bite to separate. Use a fork to crimp the edges of each bite.
- Line a large baking sheet with parchment. Put the bites on the baking sheet, brush the egg on the tops and sprinkle with pepper.
- Bake, rotating the baking sheet about halfway through, until the brie bites are puffed and golden brown, about 25 minutes. Let cool for 5 minutes on the baking sheet before serving.
BRIE WITH STRAWBERRIES AND HERBS IN PUFFED PASTRY
Brie cheese encased in a delicate puff pastry and baked until melted is one of the world's easiest yet tastiest appetizers! In this recipe the brie is topped with fresh strawberries and jam with fresh herbs, surrounded in pastry, and drizzled with Grand Marnier. Wonderful! Enjoy with slices of crusty baguette or crackers and a nice bottle of wine or champagne!

Steps:
- Preheat oven to 400°F.
- In a small bowl, combine jam, strawberries, and chopped rosemary.
- On a work surface, roll out puff pastry slightly into a 12-inch square.
- Put cheese (do not cut off rind) in center of puff pastry.
- Spread jam mixture over top of Brie.
- Fold puff pastry over Brie; wet edges and press to seal.
- Brush pastry with beaten egg.
- Transfer to a baking sheet and bake for 20 minutes.
- Cool for 10 minutes.
- Carefully transfer to a cheese board or platter and drizzle with Grand Marnier. Garnish with rosemary sprigs and grape clusters around the edges.
- Serve warm, with crusty baguette slices or crackers and a nice bottle of wine or champagne!
