Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners.
- Mix sugar, oil, eggs. Add pumpkin and water. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt. Add wet mixture and stir in chocolate chips.
- Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20 to 25 minutes.

PUMPKIN PECAN MUFFINS
Steps:
- Preheat oven to 375 degrees F. In large bowl, whisk flour with baking soda, pie spice and salt.
- In another bowl, combine sugars, pumpkin, buttermilk, oil and egg. Whisk until well blended.
- Stir in dry ingredients just until completely incorporated. Fold in pecans. Spoon batter equally into 12 oiled muffin cups and bake 20 to 25 minutes or until muffins spring back when lightly touched in centers. Remove from pan and cool on wire rack. Serve warm or at room temperature.
PUMPKIN PECAN PIE CHOCOLATE CHIP MUFFINS

- Preheat oven to 350. Prepare the pecan pie topping by mixing the graham cracker crumbs, melted butter, pecans and maple syrup. Set aside. Prepare a muffin pan with liners or spraying with cooking spray. In a medium bowl, whisk together flour, spices, baking soda and salt. In a separate bowl, combine the pumpkin, sugar, oil, eggs and vanilla. Stir until smooth. Gradually add the dry ingredients to the pumpkin mixture, stir just until combined. Stir in 1/3 cup of the prepared topping and the chocolate chips. Divide batter among the lined muffin cups, filling each about 3/4 full. Sprinkle each with about a tablespoon of the topping. Bake for 18-20 minutes, or until a toothpick comes out of the center with just a few crumbs. Cool completely before removing.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Mix pumpkin puree, eggs, sugar, cornstarch, vanilla extract, pumpkin pie spice, ginger, and salt in a large bowl until well combined. Set aside.
- Place baking chocolate in a microwave-safe bowl. Microwave for 30 seconds, then stir. Continue to microwave chocolate at 30-second intervals until melted. Measure out 1 cup of pumpkin mixture and stir into chocolate mixture. Set aside.
- Mix melted butter, brown sugar, dark corn syrup, egg, vanilla extract, and salt in a bowl until well combined. Stir in chopped pecans.
- Place frozen pie crust on the baking sheet and pour in chocolate-pumpkin mixture. Carefully pour pumpkin mixture on top. Pour the pecan layer over the top. Arrange pecan halves around the outside perimeter of the pie.
- Bake in the preheated oven until pie is set, 55 to 65 minutes.
