SPAGHETTI WITH OLIVES AND TOMATO (SPAGHETTI ALLA PUTTANESCA)

A famous Italian painter often improvised dinner parties for his friends in his small rustic house on the picturesque Ischia Island, outside Naples. Fresh and light local wine was offered together with this dish of spaghetti. It's also been dubbed that the Ladies of the Evening would prepare inbetween clients.

Spaghetti With Olives and Tomato (Spaghetti Alla Puttanesca) image

Steps:

  • In a pan put olive oil, red pepper, and garlic and sauté briefly.
  • Add anchovy paste to the pan before the garlic starts coloring.
  • Stir quickly with a wooden spoon for few seconds to dissolve the anchovy paste. (Avoid burning both garlic & paste) Eventually remove the pan from the stove if you feel the temperature of the oil is too high.
  • Add tomatoes, capers, 1 tablespoon parsley, olives, and cook for about 10 - 15 minutes.
  • Cook pasta following manufacturer's instructions, drain, and pour in a salad bowl. Dress with the sauce and top with the rest of the chopped parsley.
  • Sprinkle with parmesan cheese if preferred.

Potato Salad with Tomatoes and Capers image

Steps:

  • Put the potatoes in a pot, cover with cold water by at least an inch, add a good pinch of salt, and bring to a boil. Cover partway, reduce the heat to medium, and cook until the potatoes are tender. Drain on a rack set in the sink and leave them there until cool enough to handle.
  • Peel the potatoes and cut them into 1/3-inch cubes. Drop them into a mixing bowl, separating the cubes as you go. Add the tomatoes, onion, olives, capers, parsley, and red pepper. Toss gently. Crumble the oregano over the top, pour in the oil, and toss gently.
  • Transfer the salad to a large serving dish. Drain the sardines and blot them with paper towels, then arrange them over the salad. Let this sit for 30 minutes, and serve it at room temperature.

Tomato Tart with Capers, Anchovies, and Caramelized Onions image

Steps:

  • Heat a large sauté pan or Dutch oven over high heat for 2 minutes. Swirl in 3 tablespoons olive oil, and add the onions, 2 teaspoons thyme, 1 teaspoon salt, and some pepper. Cook 10 minutes, stirring often. Turn the heat down to medium, add the butter, and cook 15 minutes, stirring often and scraping the bottom of the pan with a wooden spoon, until the onions are a deep golden brown. Let cool completely before you make the tart, so they don't melt the pastry.
  • Preheat the oven to 400°F.
  • Place the defrosted puff pastry on a parchment-lined baking sheet. Use a paring knife to score an 1/8-inch-thick border around the edge of the pastry. Whisk together the egg yolk and 1 teaspoon water. Brush the border with the egg wash. Spread the caramelized onions evenly within the border.
  • Core the heirloom tomatoes. Hold each tomato on its side and slice it into 1/4-inch-thick round slices. Place the tomato slices, just touching but not overlapping, on top of the caramelized onions (there will be some onion peeking through). If necessary, cut some of the tomato slices in half so they fit, placing the cut side of the slices flush with the border. Season the tomatoes with 1/4 teaspoon salt and a few grindings of black pepper.
  • Slice the anchovies thinly on the diagonal.
  • Arrange the anchovies, capers, and olives over the tomatoes and onions. Sprinkle the remaining teaspoon of thyme over the tart.
  • Bake the tart 10 minutes. Turn the sheet pan, and bake another 10 to 12 minutes, until the crust is deep golden brown.
  • Just before serving, place the cherry tomatoes and diced shallot in a bowl, and season them with 1/4 teaspoon salt and a few grindings of black pepper. Drizzle the super-good olive oil over the tomatoes, squeeze in a little lemon juice, and toss together. Add the arugula and herbs and toss well. Taste for seasoning. Cut the tart into six wedges, and place on six plates. Arrange some of the cherry tomato-herb salad next to each wedge of tart.

Fried Mozzarella With Puttanesca Dipping Sauce image

Steps:

  • Pat the mozzarella dry, making sure there is no water on the surface, and set aside.
  • Place the flour in a shallow dish.
  • Mix together the milk and eggs and place in a shallow bowl.
  • Stir together the bread crumbs, Essence, and salt and place in a shallow dish.
  • Heat vegetable oil about 1 1/2 inches deep, in a heavy saucepan or deep-fryer over medium-high heat to 325 to 330 degrees F.
  • Dredge the mozzarella in the flour, shaking off any excess flour.
  • Dip in the egg mixture and then the bread crumbs.
  • Place mozzarella in hot oil and cook for 1 to 1 1/2 minutes, or until golden brown.
  • Remove with a slotted spoon and drain on paper towels.
  • Allow the mozzarella to stand for 3 to 5 minutes before serving, to allow the cheese to melt the entire way through.
  • Serve warm on skewers or fondue forks with Puttanesca Dipping Sauce.
  • To make the dipping sauce:.
  • In a medium pot heat the olive oil over medium-high heat.
  • Add the onion and saute until soft and lightly caramelized, about 5 minutes.
  • Add garlic and cook an additional 2 minutes.
  • Add the tomatoes and the remaining ingredients and simmer until the sauce is thickened and slightly reduced, about 20 minutes.
  • Add salt to taste, cover and set aside.
  • Serve sauce warm or at room temperature.
  • Enjoy!
