CHEDDAR CHIVE BREAD

"THIS BREAD is the perfect accompaniment to a piping-hot bowl of chili. In addition to a garnish of cheddar cheese on the chili, which Mom often added, we had her wonderful bread, chock-full of cheese flavor. Sometimes I'll make the dough into rolls or soft breadsticks."

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the cheese, chives, butter, sugar, salt, thyme and 3 cups flour. Beat on medium for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into two loaves and place in greased 9x5-in. loaf pans. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to cool on a wire rack.

  • Sift flour and garlic salt into bowl.
  • Rub in butter till looks like breadcrumbs.
  • Add cheese and chives.
  • Stir in enough milk and water to make a sticky dough.
  • Turn dough onto lightly floured surface.
  • Knead till smooth.
  • Shape into 4 portions in a bread roll shape.
  • Cut 3 slits across top.
  • Place on greased oven tray.
  • Brush top of rolls with egg yolk.
  • Cook at 190 degrees celsius /375 degrees fahrenheit.
  • Cook for 20 - 25 minutes till lightly browned and cooked through.

Steps:

  • Melt the butter in a large pan, then add the oats, carrots, flaxseed, chia seeds and some seasoning. Leave to cool for about 10 mins. Heat the oven to 200C/180C fan/gas 6 and line a 20 x 20cm baking tin with baking parchment.
  • Stir the cheese, eggs and chives into the oat mix. Tip into the tin and scatter over the mixed seeds. Press down with the back of a spoon, making sure it fills the tin to the edges. Bake for 25-30 mins until golden. Leave to cool completely in the tin before cutting into bars.

  • Scrape dough onto a work surface and form into a smooth ball; dust lightly with flour. Place inside a clean large bowl and cover with plastic wrap or a silicone lid. Let sit in a warm, draft-free spot until doubled in size, 1–1½ hours.
