FOOD PROCESSOR QUICK PUFF PASTRY

- Cut 1 cup (2 sticks) butter into 1/4-inch cubes. Place in an even layer on a plate and transfer to refrigerator to chill.
- Place flour and salt in the bowl of a food processor and pulse to combine. Cut remaining 1/4 cup (1/2 stick) butter into thin slices and add to food processor; pulse to combine. Add 1 cup chilled butter; pulse 3 times, 1 second each pulse. Add half of the water and pulse once; add remaining water and pulse twice. Dough will not form a ball.
- Remove blade from processor by lifting up with the handle. Scrape dough from bowl onto a lightly floured work surface. Lightly flour dough and, using your hands, squeeze and shape dough into a cylinder. Press down to flatten into a rectangle.
- Starting at the narrow end furthest away from you, use a rolling pin to press the dough firmly in parallel strokes close to one another. If there are sticky pieces of butter on the surface, cover with a large pinch of flour and press with the rolling pin to combine. Clean off the rolling pin as you go to make sure nothing sticks to the dough. Continue pressing with the rolling pin, working towards the narrow end closest to you.
- Roll dough into a 10-by 20-inch rectangle. Fold the 10-inch ends over the middle (like a letter) to make three layers. Position one of the (about) 6-inch ends to face you and roll up dough like a jelly roll. Place dough on a lightly floured work surface, seam-side down. Sprinkle top of dough lightly with flour and press down using your hand to form a rectangle.
- Wrap dough in plastic wrap and transfer to refrigerator for at least 3 hours and up to 3 days before using.
HOMEMADE PUFF PASTRY
Golden and yummy, puff pastry is time consuming but worth it. When preparing your pastry, keep everything cold and work quickly. It will last 10 to 14 days in refrigerator or 25 to 30 days in freezer.

Steps:
- Place cubed butter in a bowl; lower into a large bowl full of ice to keep cold.
- Combine flour, salt, and sugar in a food processor; pulse twice. Add 1/4 cup of the butter cubes and pulse 4 times. Repeat with the remaining butter cubes, 1/4 cup at a time. Place mixture into a large, chilled bowl.
- Combine 1/2 cup plus 1 tablespoon ice water and lemon juice in a small bowl. Add 1/2 the mixture to the flour-butter mixture and toss until just combined; dough should be lumpy with bits of solid butter.
- Place dough on a floured work surface. Knead lightly to form a ball. Wrap tightly with plastic wrap and refrigerate for 30 minutes.
- Roll chilled dough out into a square. Place whipped butter in the center of the dough and smooth outward, leaving a 1/2-inch edge. Fold dough in half; pinch edges and seal. Wrap in plastic wrap and chill for another 30 minutes.
- Roll dough out into a rectangle. Fold 1/3 of the dough into the center. Fold the other side toward the center to overlap the first fold. Rotate dough 90 degrees. Roll out into a rectangle again. Repeat folding. Make 2 indents in the top of the dough with your finger to show you've completed 2 folds. Wrap dough again and chill for 30 minutes.
- Repeat folding and rolling 4 more times, marking the dough before chilling every time. Cut in half after the sixth fold; wrap each half and chill.

- Using a food processor, pulse butter into flour until it resembles crumbs. pulse in sour cream just until a ball forms and it just begins to hold together, being careful not to over-mix.
- Roll out and fold over in three sections (like folding a business letter). Repeat 2-3 times to get the layers of puff pastry.
- Wrap in plastic wrap and refrigerate for a minimum of 30 minutes before using. Let sit for a few minutes or pound with rolling pin to get it pliable.

- Turn onto a floured board and knead until it just holds together.
- Form into a ball, flatten slightly and wrap airtight. Refrigerate at least 2 hours or overnight.
- Work with half of the dough at a time and keep other half in the refrigerator until ready to use.

QUICK PUFF PASTRY
This is a fast and simple alternative to classic puff pastry. The dough doesn't rise as much as the classic version, but the flavor is excellent. It is not as rich as puff pastry made with cream.

- Mix flour and salt in a large, chilled stainless-steel bowl. Cut the butter into very thin pieces. Using a pastry blender, or working with your fingertips, cut butter into the flour until the butter is in small lumps, about 1/2 inch in diameter. (A food processor will not work for this pastry because it cuts the butter too finely.)
- Stir in the water, a little at a time, pressing the dough together. Turn dough out onto a well-floured board and roll it into a rough rectangle. The dough will be very crumbly. Fold into thirds and rotate it a quarter turn to the right. Roll into a large rectangle and fold into thirds again. This completes the first double turn. Remove excess flour with a wide brush. Wrap dough in plastic and chill for 30 minutes.
- Repeat this rolling and turning process twice more, chilling well between double turns. With each turn the dough will become smoother and easier to handle. This puff pastry, like the classic version, requires 6 turns (accomplished as 3 double turns) before it is complete.
- Store the dough, wrapped well in plastic, in the refrigerator for up to 2 days, or freeze for future use.

- Mix the flour and salt in a large mixing bowl and add the chilled butter and use a pastry cutter or pastry scraper to cut the butter into the flour. (If you don't work in a cold environment, put the flour, salt and chilled butter in a freezer safe mixing bowl and keep in the freezer for 10-15 minutes before starting which will help the butter not to warm quickly when working. This step will also help to keep the work surface cold when you roll out the dough)
- Make a well in the center of the flour and pour in the ice cold water. Take the flour mixture from the sides and start to mix with pastry scraper. Don't use your hands as they can warm the butter easily. Use your hands quickly at the end to bring the dough together and shape it into a ball.
- Put the dough onto the work surface. Flour the work surface and the rolling pin so the dough doesn’t stick to either. Roll out the dough into a 10 inch(25 cm)long rectangle. Add more flour as needed. Brush off the excess flour with a pastry brush. Fold the bottom one-third of the dough towards the center, and the top third over that. While folding, brush off the excess flour as needed.
