FRESH BLUEBERRY SYRUP
Blueberries and an infusion of cinnamon and lemon zest transform pure maple syrup into a special topping for pancakes, waffles or ice cream.

Steps:
- Combine the blueberries, maple syrup, cinnamon stick and lemon zest in a small saucepan. Bring to a boil over high heat, stirring occasionally, and continue to cook until the blueberries just start to pop, about 5 minutes. Remove from the heat, discard the cinnamon stick and zest strips and stir in the butter and lemon juice. Serve warm over pancakes, waffles or ice cream.
BLUEBERRY SIMPLE SYRUP
This flavored simple syrup is very versatile and goes with so many things. I especially like to put it on top of French toast, in pancake or waffle batter, and it's very yummy in cornbread or biscuit batter. This can be made in advanced and stored and refrigerated in a glass jar.

- Mix blueberries, water, and sugar together using a whisk in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Increase heat to medium and bring a gentle boil, stirring often, until syrup is thickened, about 15 minutes.
- Whisk lemon juice into syrup; serve immediately or cool.

Steps:
- Dump blueberries into a small pot on high heat and add the other ingredients as you get them.
- Bring to a boil and reduce heat. Boil for 5 or 10 minutes.
- Serve over pancakes, waffles or as a topping on sweet biscuits with whipped cream.
- Store in the refrigerator for up to 5 days and reheat on the stove or in the microwave.

Steps:
- Place the blueberries in a nonmetallic container. Add the vinegar. Cover tightly and refrigerate for at least 3 days.
- Pour the vinegar-marinated blueberries into a sieve over a bowl; press the berries to release all their juice. Discard the solids.
- Pour the blueberry liquid into a medium saucepan. Add the sugar and boil for 3 minutes, stirring occasionally. Remove from the heat and let cool. Pour the sweetened blueberry liquid into a small container and chill.
- To make each drink, add 1/4 cup blueberry concentrate to a medium cocktail glass filled with ice and add 1 cup cold water. Garnish, if desired.
BLUEBERRY SYRUP
Steps:
- In a small saucepan, combine the sugars, blueberries and water. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in the preserves and maple flavoring. Refrigerate leftovers.

- In a pot, combine the blueberries with 1 cup of the water. Crush the berries with a potato masher and bring to a simmer. Simmer over low heat for 15 minutes. Strain the juice into a heatproof measuring cup, pressing hard on the solids. Discard the solids.

Let the syrup cool, then discard the lemon zest. Pour the syrup into just-cleaned bottles. Seal and refrigerate for up to 6 months.
