RANCH CHICKEN SALAD CUPS
Rotisserie chicken, crispy bacon, juicy tomatoes and cubes of avocado are tossed with an herby, creamy homemade ranch dressing and served in lettuce cups for a fresh and easy meal.

- Cook the bacon in a medium skillet over medium heat, stirring, until crisp, about 8 minutes. Transfer to a paper towel-lined plate using a slotted spoon.
- Whisk the sour cream, mayonnaise and buttermilk in a large bowl. Add the scallions, dill, 1/2 teaspoon salt and a few grinds of pepper; whisk to combine. Add the chicken and half each of the bacon and tomatoes; toss to coat. Add the avocado and gently toss.
- Serve the chicken salad in the lettuce leaves; top with the remaining bacon and tomatoes. Serve with the dinner rolls.
RANCH CHICKEN SANDWICHES

- With a very sharp knife, cut the chicken breasts in half down the middle. This will result in 8 chicken breast pieces that are thinner and uniform in size.
- Next, make the marinade. In a large bowl mix together the honey, mustard, paprika, salt, pepper to taste, lemon juice and crushed red pepper flakes if using. Stir to combine.
- Add the chicken to the marinade and toss to coat. Cover the bowl with plastic wrap and marinate in the fridge, 2 to 4 hours.
- While the chicken marinates, fry up the bacon until chewy. When finished cooking, reserve 1/4 cup of the bacon grease and pour off the rest of the grease (but do not clean the skillet).
- When you are ready to cook the chicken, remove it from the marinade and cook it in the skillet over medium-high heat, 3 to 4 minutes each side. Brush a little reserved bacon grease on the chicken as you cook it. (Or you can grill the chicken breasts on an indoor or outdoor grill.)
- When a couple of minutes grilling time are left, lay 2 pieces of bacon onto each chicken breast. Top with some Cheddar and allow it to melt on the grill (if you need to remove the chicken you can finish melting the cheese under the broiler).
- Halve the rolls and immediately load with the bacon-and-cheese covered chicken.
CHICKEN IN PARMESAN CHIVE CREAM SAUCE

- Heat oil in a large skillet over medium-high heat. Add shallots and garlic and cook for 2 minutes stirring with a spoon. Add chicken and cook 3 to 5 minutes, until golden brown on all sides. Add thyme and bay leaves and cook for 1 minute, or until fragrant. Add heavy cream and bring to a simmer. Reduce heat to medium and simmer for 5 minutes, until chicken is cooked through. Add parmesan cheese and simmer for 1 minute or until sauce has thickened. Remove bay leaves and stir in chives. Season to taste with salt and freshly ground black pepper.
- Spoon all but 1 heaping cup of chicken over rice. Reserve remaining chicken for Penne with Chicken, Wild Mushrooms and Peas, if desired.

- Preheat oven to 350 degrees. Separate the can of biscuits into 10 individual biscuits. Separate each biscuit into two even layers, making twenty dough circles. Press each dough round into an ungreased mini muffin cup.
- In a small bowl, mix the sour cream with the ranch. Stir in shredded chicken,parmesan cheese, almonds, shallots, salt and pepper. Stir until well combined. Spoon about 2 teaspoons mix into each mini muffin cup. Sprinkle the tops with bacon and then chives. Bake 10-15 minutes or until golden brown. Remove from tins. Cool 5 minutes before serving. - Preheat the oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.
- Heat oil in a skillet over medium-high heat. Place chicken in the hot skillet, sprinkle with lemon-pepper, and brown on all sides, 5 to 7 minutes. Remove with a slotted spoon and place in a 9x13-inch baking dish.

- Step 1: Preheat the oven to 400 degrees. Between 2 sheets of wax paper with a mallet flatten chicken breasts to ½" thickness.
- Step 2: Spread 3 tablespoons of cream cheese over each chicken breast. Then Dot with butter and season with salt. Wrap with bacon and stick a toothpick through the rolled chicken breast to hold it together. Roll up and stick a toothpick through to hold it together.

BACON WRAPPED CHICKEN BREASTS
My cousin gave this recipe to me in a cookbook she made for my wedding gift. When I got married I didn't know how to cook anything but this is super easy to make and my husband still loves it! I leave out the chives because my husband doesn't like them. And I also use more black pepper than the recipe calls for. I like more in the sauce mixture & more on top of the chicken. Sometimes I have to use more than one slice of bacon to wrap the chicken if it's big.

- Preheat oven to 325.
- CHICKEN: Pound the chicken breasts until flat.
- Put a slice of cream cheese and a few chopped chives in the middle of each and roll up.
- Wrap Each breast with a slice of bacon and secure with toothpicks.
- SAUCE: Combine the soup, Mayo, Milk, lemon juice, pepper, and salt(to taste).
- Mix all together until smooth.
- Place wrapped chicken breast pieces in a 9 x 13 baking dish (or glass pie pan if making half the recipe) and cover with the sauce mixture.

- In a mixing bowl mix together the eggs and water. Set aside.

- Place 1 teaspoon of cornmeal on a pizza stone and roll out pizza dough onto stone; bake in oven for 5 minutes.

- To Cook Chicken:.
- Preheat oven to 400° F and grease a baking sheet.
- Place chicken breasts on baking sheet and coat in ranch dressing, evenly on both sides.
- Bake chicken for 20 minutes or until done through.
- Meanwhile, fry bacon in large skillet or on griddle.
- When chicken is done, evenly distribute cheese to each piece. Top cheese with 2 slices of bacon and return to oven. Bake for another 5 minutes or until cheese is melted.
- To Cook Rice:.
- Put water in medium sauce pan and bring to a boil. Add rice and lower heat to simmering. Cover and simmer on low for about 20 minutes or until rice is fluffy.
- Mix in ranch dressing mix, parmesan cheese, parsley flakes and celery flakes. Let sit for 3-4 minutes while cheese melts.
- Serve chicken with rice. Add a vegetable and a roll for a complete meal.
